Saying "your father chose illegal substances over you" is incredibly disrespectful. It didn't sound like OP's Dad was ever violent, at least not to them. Best guess, OP's Mom just didn't like how sad her husband always was. She probably had a vendetta against him solely because he occasionally wouldn't have the energy to do something she wanted.
Story 1: Good f'ing lord it seems like "Karen" doesn't know what entitled even means.
Story 1: Okay... does this Karen even know the meaning of the word 'entitled'? Sounds like she needs a reality check and a dictionary. Also, cleaning up after your dog is a basic job you have to do.... and common sense. Always carry a little bag or something with you. The OP had every right to call out this stupid Karen out for this. Where is the guy with the "poop-flinger" on the lacrosse stick when you need him? Also, if you use the argument of 'everyone does it', its just you doubling-down on being a jerk.
Story 2: As someone who has been in the restaurant industry for over 20 years, i absolutely despise people like this, and i blame management more then i do workers like this. They can 100% get rid of problematic employees like this, and won't do anything about it. The OP and other people need to band together and show the managers what is really goes on... or maybe even have cameras here. Need to expose this worker for the pain that she is.... otherwise things will continue to get worse.
Story 3: OP is not a jerk at all, and if anything, this is an under-reaction. The neighbour was totally trying to steal the OP's husband here. Its one thing if your neighbour needs help with things, which is fine, but this neighbour 100% was trying to get with the OP's husband here. The cookie incident is proof enough of that. Anyone against the OP is a jerk here as well... and the OP had every right to call her out on this.
Story 4: No way is the OP a jerk here, Dan is and the mom definitely is. I just cant understand why parents like this, particularly the mom try to do this to their children. It doesnt sound like the OP really has anything against Dan here overall, but Dan really does need to back off, and the mother definitely needs to back off. The dad does seem to be actively involved with the OPs life here, although he does need some very serious help, which i hope he can receive. Too bad the dad cant use all this against the mom as some form of harassment for future court cases.
Story 5: If she is still on the lease, then she is still on the hook for her share of the rent, and you can very easily sue her for the money for it too. She is the big jerk here if she thinks she can just leave without paying. Glad that the OP is getting away from her... she sounded awful.
Last story: Op is nta. My sister kicked out her ex-boyfriend out of our apartment for many red flag reasons and he refused to pay part of the rent after he moved in with his parents. His name was still in the lease after two months. Whenever he tried calling her to reconnect, my sister would just ask, “Where’s the rent money?” 😂
Story 3, the husband telling his wife she shouldn't have handled the neighbor the way she did. OP is definitely nta, but the neighbor and to a lesser degree the husband are. I don't care if the neighbor is grieving, her behavior is completely inappropriate. Personally I would have taken the cookies, dumped them in the trash, then hand the plate back to the neighbor. OP should keep an eye in this situation, something is off about the whole thing.
You could make a drinking game for every time you hear "and now, I seriously don't know what to do".
Story 4. I had a similar situation happen when I was young. Me and my 2 siblings i believe where around 11/9/7 at the time with me being the youngest. My mother and father divorced and both got a new spouse. So my mothers partner attempted to convince my mother to go along with him in order to have my fathers parental rights taken away and for moms partner to adopt us. The reason being, our father was Almost 50 at the time and since he was getting older, would apparently die soon. Thus we'd have no father. Obviously it didn't work, moms partner is a complete douche canoe to this day, (25 years later,) and our father is still alive at 75.
4) after 3 of us kids moved in with Our biological mom and stepdad I went to my stepdad and asked him to adopt me and my sister, but my biological dad,whom I have nothing to do with, tried to adopt us but my biological mom said no only because she wanted child support from the biological dad. I call my stepdad My Dad, Father and my biological dad Chester like I said I can't stand him. I wish I was adopted by my Stepdad.
You're not OP, however, and this sounds like you're using your own experiences to shame OP for not wanting to go with her stepdad

That last story, no, op broke up with her, and clearly feels it’s her fault, and is probably making her feel like she shouldn’t stay in the apartment. If she feels like she’s being kicked out, then it shouldn’t be her responsibility to pay for a place she’s not welcome to live. Yeah, get a roommate quick if you can’t afford it on your own, but if she’s not allowed to live there, then you’re not allowed to tell her she owes you for living there.
The last story. He breaks up with her, so not her problem for rent. He should had waited closer to when the lease was over if he couldn't afford it.

Firstly I’d obviously be pyst. I trust my hubs so I know he isn’t cheating.
But when my hubs found out he’d be so furious because she’s making it look like my hubs is cheating. She’s making him look bad in my eyes. He wouldn’t help her anymore and would personally take the plate of cookies back over to her and ask her to not ask for help again if you’re going to disrespect my family like that again.
He doesn’t take kindly to that kind of behavior no matter how small or petty.
It’s why I love him so much. Everyone deserves no BS in their life

Last story: so op ended their relationship and now he is whining that his ex doesn't want to pay rent for apartment where she doesn't live anymore. Seriously, i don't care if her name is in that lease, she shouldn't have to pay. And can we even trust op, maybe her name isn't even in that lease and op is only whining for support.
Relationships end every day all around the world and that goes hand in hand with that fact, is that people move away from their former homes. Is that easy, NO, of course it is not, many people doesn't have any savings for unexpected expenses, even less for something like extra rent and because of that some even end up homeless. So i don't care about op's whining he isn't experiencing anything new what millions of people have already done before him.
