  • Hi everyone! This is Jincy. In today's video I'm sharing with you a delicious Carrot Dates Pecan Cake recipe. The combo of carrot, dates, and nuts makes it a heaven! It’s a quite healthy and nutritious cake, less sweet and easy to bake too. So let's get started.
    This is the first time I'm trying to give a voice over to my video. I hope you all like it. All my videos are uploaded in HD. For better viewing, please change the video setting prior to watching.

    Ingredients (1 pound loaf tin, 25 cm x 11 cm x 5.5 cm):
    For the caramel syrup:
    100g (1/2 cup ) sugar
    15ml (1 tbsp) water
    60ml (1/4 cup) water
    Note : Once the sugar turns dark golden brown in color (approx., 4-5 mins), remove it from the stove. Do not wait for long as it will turn bitter. Let it cool for a minute before you pour the water. Be extra careful when pouring water into the caramelized sugar as it will splutter (so maintain a safe distance).
    Cake :
    52g (1/2 cup) powdered sugar
    175ml (3/4 cup) vegetable oil
    2 eggs (approx 60g each including shell weight, at room temperature)
    125g (1 cup ) All purpose flour
    2 tsp baking powder
    1/4 tsp salt
    1/4 tsp cinnamon powder
    1/4 tsp ginger powder
    1/4 tsp nutmeg powder
    caramelized sugar syrup (from step 1)
    140g (1 cup) grated carrots, squeezed (2 medium sized carrots approx)
    90g (3/4 cup) chopped dates ( any sweet dates, I used Medjool dates. Please do not use processed dates)
    40g (1/4 cup) roasted and chopped pecans (or any choice of nuts you like. Omit if you are allergic to nuts*)
    1 tsp vanilla essence (for flavouring, sorry I forgot to mention in the video)
    Almond flakes (optional)
    Instructions to roast nuts :
    Add the nuts into a baking tray and roast in a preheated oven at 180C for 10 mins. Remember to shake and toss the nuts in between (around midway of roasting, ie. 5mins ) to get a even color on both sides of the nuts. Roasting removes the raw taste of nuts, hence its very important to roast the nuts prior to adding in the cake batter.
