Here is a tip. I make broths/stocks in big batches and to separate off the fat I use a lemonade dispenser (the kind with the spigot at the bottom). Mine holds two gallons. I just put all my broth in it, let it sit for an hour or so, then drain off the broth and just stop when it drains down to the fat layer.
I usually refrigerate my bone broth and skim off the fat before canning it. I don't have room in any of my freezers to pre-freeze any of the food before I freeze dry it. Whatever I can't freeze dry, I can or dehydrate.
Great choices! I currently have ginger and lemon slices in my freeze-dryer. Last week, I freeze-dried black beans. I only put them in there because three-quart jars did not seal when canning. What an incredible mistake! Those freeze-dried black beans tasted terrific! I've also freeze-dried some fruit for our bird feeders.

When I am able find them, I buy them up to freeze dry so I can enjoy them all year. If you can find them in your grocery store, I highly recommend them. It’s the only apple that I enjoy freeze dried.
I don't know if you have done this one as I just found you, but I make my own yogurg in the instant pot, then add fresh strawberries, black berries, or raspberries, and sweeten with real maple syrup from real maple trees. I bought small round ice cube trays with rubber bottoms. I use a squeeze bottle and fill the trays, freeze then freeze dry. GREAT SNACK! I do not understand why, when making broth, you didn't cool it overnight in the fridge; the fat all rises to the top and is soooo easy to remove completely. You can bring it back to a runny liquid to pour into molds with just a little heat. And it looks like you made vegetable broth, not BEEF BONE broth! Hubby started complaining that everything that used my broth tasted like vegetable soup, so I started using only the beef or chicken or whatever--NO vegs! Soooo much better!
When you're at Costco next & see the new containers of gummy Minions, avoid freeze drying at all costs! I made that mistake & they were terrible. 1) once you remove the outer plastic case, the gummy is a solid ugly milky yellow, the eyes & clothes are just painted on the plastic wrapper, 2) the gummies themselves look like bizarre yellow male "members", 3) they taste absolutely horrible & 4) they freeze dry into styrofoam rocks. These were a gigantic fail for me & I was hoping you save you a few bucks. :)
