You need to disable the alarm by killing the manager, pick her keycard and swipe it on the alarm box, which can spawn either in the big room, the upper floor room (where she can sit, behind her desk) or in the security camera room. If you don't disable the alarm, breaking the jewelry glass triggers the alarm :)
