How to make Japanese Melon Bread | Bread Box

⁑Ingredients (for 8 portions)
✦Bread Dough✦
205g of bread flour
45g of sugar
4g of salt
8g of fresh yeast (or 4g of instant dry yeast)
31g of butter
48g of milk
50g of egg
29g of water
✦Cookie Dough✦
45g of butter (at room temperature)
66g of sugar
16g of vanilla sugar (or regular sugar)
45g of egg
74g of almond flour
90g of cake flour
⁑Instructions
✦Preparing the Bread Dough✦
1. In a mixing bowl, combine all the ingredients except for the butter.
2. Mix on low speed for 2 minutes, then switch to medium speed for another 2 minutes.
3. Once the dough comes together, add the butter.
4. Mix on low speed for 2 minutes, then increase to medium speed for 5 minutes.
5. Shape the dough into a round ball, place it in a bowl, and let it ferment at room temperature for about 40 minutes.
6. Divide the dough into 50g portions and shape them into round balls.
7. Allow the dough to rest for 15 minutes.
8. Shape the dough into round balls once again and let them ferment for another 15 minutes.
9. Flatten the 40g portions of cookie dough using a rolling pin.
10. Place the cookie dough on top of the bread dough, making sure it covers the surface.
11. Press the exposed cookie dough onto a sugared surface, tapping to coat.
12. Use a scraper to create a crisscross pattern on the cookie-covered bread.
13. Let it ferment at room temperature for about 15 minutes.
14. Preheat the oven to 180°C (356°F) and bake for 10 minutes.

1. Whisk the room-temperature butter until smooth.
2. Add the sugar and mix well.
3. Add the egg and lightly whisk to create a frothy mixture.
4. Sift in the cake flour.
5. Incorporate the almond flour.
6. Thoroughly mix the dough using a spatula.
7. Refrigerate for at least 30 minutes before using.

빵 반죽 레시피대로 했는데 너무 질던데요ㅠ 뭐가 문제일까요
조금은 진 반죽입니다.
원래 진반죽으로 빵을 만들면 더 촉촉하고 맛있습니다.
밀가루의 수분 함량에 따라 조금은 달라질 수 있습니다.
작업성이 너무 어렵다면 물이나 우유를 조금 줄여보세요.
