Since it's just my husband and me now, after baking cakes I portion out servings and freeze them. I"ve noticed that thawed out cakes (and cookies, too) are moister than the original bake and delicious. Perhaps if someone has a slightly dry cake, they can salvage it by freezing. As always, great video!

Most of my cakes came out dry, could be i always reduce the sugar (my family members prefer less sweet cake due to health concern). Would appreciate if you can help me on this. Thank you! What should I do if I double the batch when I go to baking it. I want to make your Victoria sponge in a square tin instead of 2 round tins as I want to make a larger cake .
