I have watched the whole video & I appreciate this man's mind, but still can't help think that any attempt to rationale instinct or emotion may be folly.

It just depends on your goals. It is reasonable and desirable for most humans to experience emotion and instinct in close to their unaltered state without debugging them, but for some minds that are configured differently (because they are artists or autistics or trauma-ridden or scientists or researchers and so forth) it may become important to debug the nature of those experiences. What Bach is doing here is not very different in spirit than what Pavlov did with the "instinct and emotion" of the bell-hearing and hunger coupling of his famous dogs.
