@@WildLumens I wanted to update this as I have made them twice since your post. I used 1 cup shredded cheddar, 1 cup pork panko, 2 eggs. The mixture was thick and instread of cupcake pans I used stainless rings for cooking eggs the size of English muffins. They came out great both times but the second time I made them thinner (about 1/4 inch thick) which was better for buns. I also made the burgers thinner.

I've just watched a video of yours from 3 years ago, and I'm amazed that we not only can see the top of your head in the video, but there's also like a moderate amount of space above that.
You can do a stuffed burger like this just flatten out two Pattie’s put some blue cheese in the one put the other on top smush the sides with a little egg white wash
works even better if you have a baking tin molded for 4 inch rounds, you get actual hamburger sized buns. some tweaks to the recipe are recommended tho.
@@the_Paddy_in_Poland It gets old just eating meat. I evolved from keto to carnivore and then back to keto. Basically meaning off and on I did eat green vegetables. As long as you stay under 40 or 50 carbs a day you'll stay in ketosis and burn fat. I strictly held to it for almost 10 months and lost about 80 lbs. I got off at almost 2 months ago now. I've gained back 10 lb and stabilized. I do want to try and lose that 10 lb I gained back but. For right now I'm just maintaining.
@@gurnblanstein9816 Something doesn't sound right. I lost 68# in 3 1/2 months about 8-9 years ago doing PALEO and still pounding IPSs on the weekend). Were you adding a bunch of muscle mass? Getting enough hydration? Enough salt? Enough fat? And I've always heard 25 carbs/day - and so far, have had a total of 10 nacho chips (with shredded brisket/cheese) and two salads (and two beers the night of the nachos [a work function, so they were necessary!]).
When are we gonna give up and realize that if we're on a keto carnivore diet, we cannot eat bread that tastes like bread. This is just a burger on a cheese omelet but at least it doesn't taste like meringue, which I cannot stand. I will keep watching these videos and hope that someday somebody has something that tastes like bread without the carbs. Sigh
I do the same recipe except I put it in my little waffle maker.. they make perfect hamburger buns every time 🙌🏻

I would also add some ground pork skins to give it a more "flour" texture and structure

so basically, it's a chaffle recipe you cook in a muffin tin - rather have the chaffle - better size for hamburgers, more like bread.

Yeah unfortunately store bought shredded cheeses have extra junk added to them. Definitely should grate your own shredded cheese from a cheese block.

Though not strictly carnivore, you can make something approximating bread with coconut flour or almond meal and remain super-low-carb.
The cheese added counts me out. I wish I could eat cheese.
