Fresh kaffir lime leaves might be difficult but you could always add dried ones. The candle nuts i have no clue where to get them either. But the rest should be available in most asian stores.

Ryan, I might have missed it but I didn't see any salt being added are you relying on the shrimp paste for salt? especially as the tendency is not to add salt to the rice when cooking.
He added salt to the chicken

it's not pronounced as "balakan" shrimp paste, it's called "be-la-chan", "be" as in "BURma" and "chan" as in British pronunciation.
When I lived in Malaysia - they pronounced it as "Bla-Chan" the "Bela" part was said as though it was a silent "e" so just "Bla" ;-)
@@hendongooner7383 that's a short form of pronunciation. The Malay language is quite literal, mostly pronounced every characters in the word, of course, people will find ways to shorten everything in real life conversations.

It’s not Indian curry.. it’s Malay curry closer to Thai curry.

I can forgive him for using a food processor but adding oil to the paste is a no no….. add water instead.
