The dances was adopted by the French Nobility, who "polished" the steps (basically removed the kissing part) and made it and official dance for courts and even English people danced the Gavotte.
Comparing the dance of today, to the dance of then, it appears that there is a higher thinking skill level in learnin the steps, precision and coordination and certainly more refinement.
