    Hi Mary! You probably won't even see this comment since this video is 2 years old, and I understand when you are as big as you have become.. but I'm going to make my comment anyway..
    I am a subscriber and have watched and saved volumes of your videos.. and every single one is great and valuable.. but I just have to say that you just don't seem real..
    You seem perfect. You never make mistakes, unlike the rest of us, and when I watch your videos, it reminds me of something like watching "The Brady Bunch" or any show like that..

    Just watched a video on making stock. He insisted stock is bones, broth is meat, then proceeded to throw in full chicken legs along with neck, etc. and called that stock. Never showed what he considered suitable for broth. I was mystified by what he meant by "stock is bones." You have mercifully cleared it up completely, & I suppose he was actually making bone broth (except no, he didn't simmer for 12 hours.🥴). I don't know why it was bugging me so much, but I wanted to be clear on the terms. *Thank you!*

    Good morning Mary. After watching your video, I realize I am making beef broth/stock. Lots of meat and small bones and some with less meat and more bones. (One package said shank bones.). I roasted them with a couple of onions on 424 for 45 minutes, added more onion, celery, sea salt, peppercorn and a couple bay leaves. Topped off stock pot with water and have been barely simmering (195 - 200 degrees) overnight. Did I mess up? Thank you for your help.

      Hi Tony, I understand completely. It can all be confusing and overwhelming. The bottom line is that you can basically use any of them Interchangeably. Hope this helps. ❤️🤗❤️

    • @MarysNest
      @MarysNest  5 років тому +2

      Anna Lea Brown - Hi Anna, I know what you mean! It can all become a little ridiculous at times! In my humble opinion, I don’t think there are any hard and fast rules as to aromatics and root vegetables. For bone broth I like to add aromatics and root vegetables. When I make just a simple broth with meat, I like to add aromatics and root vegetables too! When I make a stock - which is usually made with just bones, I generally brown the bones and then cover them with water - just about 2 inches and I add aromatics only - no root vegetables. But that’s just me. I think it’s fine to add root vegetables to broth, stock, and/or bone broth. We are home cooks...not chefs...so we just want to cook simply to make easy and delicious foods and not worry too much about “chef” rules!! LOL!! I’m so glad you’re here!! Love, Mary❤️😘❤️

    Hi, thank you for clearing that up 👍. I have a few questions if you don’t mind. When you make broth can you reuse the stripped bones in a bone broth? The meat from a broth, I’m thinking of chicken in particular, always seems flavourless and edible to me after making the broth. What do you use it for or rather how do you overcome this? I suppose I could be doing something wrong when making the broth but the broth seems great but the meat not so much. Finally, where does meat stock fit into things, as described in the GAPS protocol?

    Mary,
    Your wonderful. Enjoy your very informative way of explaining in detail the different types of broths and stock. This might be a crazy question. How about other meats like pork and chicken?
    God Bless you. Love Tamson 😇 💖🐟

    • @MarysNest
      @MarysNest  5 років тому +1

      Hi Tamson, Not a crazy question at all. All the same rules apply. Meaty chicken parts for broth, chicken bones for stock. Meaty pork bones - think bone in pork chops for broth and port bones for stock. And for bone broth add them all in together - meaty chicken parts and chicken bones...plus chicken feet for bone broth!! And for pork broth use some pork chops and pork bones...and don't forget the pigs feet for really gelatinous broth!! As always, thank you So much for all the kind words!! You Made My Day!! Love, Mary

    Wonderful video Mary... I have a question, I’ve been looking for a way to dehydrate beef bouillon, would I be able to take the beef while it is in the gelatinous form and spread it out on my trays and dehydrate it that way... I look forward to hearing from you...

    • @MarysNest
      @MarysNest  5 років тому +4

      Oh my goodness!! I can't believe you asked this!! I just made a video about this and I figured out that dehydrating the bone broth in its gelatinous state would be much easier than in it's liquid state!! I learned the hard way!! The liquid state requires a very firm hand!! LOL!! In any event, it dehydrated up beautifully. Took about 10+ hours in the dehydrator at 155F. I also experimented in the over - it took about 8+ hours at 170F. Watch for the video coming soon. I just need to edit it. SO glad you are here!! Love, Mary

    Being the youngest of 5 of which 4 girls, my mother mostly relied on my 2 eldest sisters. After being sent away from the kitchen a couple of times when I was young I lost interest. And I only really learnt how to cook after I got married. That was horrible, I can assure you.

    I save all the meat bones and freeze them until I can fill a large saucepan with bones to 3/4 and cover with water, cook slow simmer all day, topping off the pot as the juice evaporates. That`s the first cookdown. Yield is about a quart. It is strained and frozen. Next day I do it again. A little less than a quart this time around. Then I do it again. That result gets drunk in a mug with supper. I freeze the bones, usually the chicken bones until I get about 2 of 3 pounds of bones. I roast over slow heat, usually on the woodstove, until they will smash when hit with a hammer. These bones are ground in a corn grinder into bonemeal to be spread in the garden. Any residue like knuckles and scrap meat is formed into balls and frozen and the dog gets one in with her chow every day.
