Tori Soboro Onigirazu Recipe | Cooking with Dog

  • This Onigirazu with Tori Soboro (sauteed ground chicken) and Iri Tamago (finely scrambled egg) is visually appealing and the savory teriyaki flavor goes great with the rice. Tori soboro and iri tamago can also be used as fillings for Onigiri rice balls or toppings for a donburi rice bowl.
    How to Make Tori Soboro Onigirazu

    (serves 3)
    - Tori Soboro -
    150g Ground Chicken Thigh (5.3 oz)
    1 tbsp Sugar
    1 tbsp Soy Sauce
    2 tbsp Sake
    10g Ginger Root, grated (0.3 oz)
    - Iri Tamago -
    2 Eggs
    1 tbsp Mirin or substitute: ½ tbsp Sugar
    A pinch of Salt
    Pickled Nozawana, coarsely chopped
    Toasted White Sesame Seeds
    Steamed Rice (approx. 150g/5.3 oz)
    Toasted Nori Seaweed
    Salt
    * When you store the tori soboro in the freezer, partially freeze it and then shake the container to separate each piece.
    This will help you to take out only the amount you need when it's completely frozen.

    [鶏そぼろ]作りやすい分量
    鶏ひき肉(もも):150g
    砂糖:大さじ1
    しょうゆ:大さじ1
    酒:大さじ2
    おろし生姜:10g

    みりん:大さじ1(ない場合は砂糖大さじ1/2)
    塩:少々
    野沢菜漬け物(粗みじん切り):適量
    白ごま
    ご飯:約150g
    焼き海苔

    <鶏そぼろの保存の仕方>
    容器に入れて冷凍し、完全に固まる前に取り出して容器を振ってバラバラにします。再度冷凍庫に入れて完全に凍らせます。バラバラにして凍らせておくと必要な量をいつでも取り出せます。

    I made this today; it was so tasty! I couldn't find ground chicken so I used turkey instead, and also substituted some pickled cucumbers for the nozawana. For anyone who is thinking of making this recipe, I highly recommend including some sort of pickled veggie. The sour-salty flavor of the cucumber I made really balanced out the sweeter flavors of the torisoboro and iritamago.

    haha when I watched her reveal the final product I was wondering how she was going to eat it all in one go like you do with sushi, then I watched her take a tiny bite and was so relieved, there's no way that I would be able to fit that in my mouth in one go!

      yes ! It's just that onigiri has the ingredients in the middle and has this beautiful triangle shape that japanese people can do but I can't XDDD

      +Divine cross Just make a regular spherical onigiri, then lightly flatten it. It should be a rounded disc at this point. (like a scallop or pomme fondant) Lightly squish the sides into a triangle with both hands.
      Make sure you wash your hands and dry them whenever your hands get too sticky. Your hands should be moist, so that the rice doesn't stick to your hands, but not damp, because the rice will start to fall apart.

      +Divine cross They have an onigiri tool you can get and it's so easy to use. It makes the onigiri like the ones in convenient stores with the separated wrapper from rice to prevent the seaweed from getting moist.

    I just wanted to say, I've been following this channel for years now, and so many of these recipes have become part of my regular cooking for my family, they're all so tasty and good. My kids especially enjoy the french toast and the peach pudding.

    I remember about 20 years ago this male Japanese chef guy posted on Orange Page magazine called "GOPAN". The same concept as Onigirazu. I made with Mentaiko then.

    I've made "BLT" onigiriarzu before. bacon, lettuce, tomato, cheese(in layers though). It's even better with avacado. I think the cheese goes well with the rice and seaweed. You can make them like you would any sandwich. Except instead of bread it's two layers of rice wrapped in nori. Another good one is fried chicken, katsu sauce and lettuce that I found online. SO many different fillings you can do, but I've found that you shouldn't use more that 3-4 ingredients, otherwise the nori may not wrap all the way around.

    With tamagoyaki or iri tamago, since we don't have mirin easily available, I like to add rum instead, I think it adds a wonderful flavor that goes really well with egg.

    I use pickled greens or seasoned spinach as the green vegetable. This can taste like korean kimbap if you smooth the outside of the roll with sesame oil.

    Anyways I've got a question, maybe it's basic but I'm curious. Why do Japanese use Sake so much in the cuisines? What kind of effect or taste does it bring? I cannot consume alcohol so I wonder how much effect I will cause to my cuisine if I ommit sake, mirin, and other forms of alcohol from my cooking. Will it be like super different? Thank you for the vids, always love all of it :))

      +Syifa Haunan I guess the Japanese use sake quite the same way we French people use white wine, it's similar in taste. It's sweet and sour (though it depends on the type of sake/wine, some are sweeter, some sourer), but they also add very specific and complex aroma, honestly i don't know anything that could replace wine in the kitchen ^^ You can use sugar and rice vinegar for the sweet-sour taste, but it won't achieve the same effect. However, while cooking alcohol evaporates very fast, there shouldn't be any left in the dish (unless you use it cold for a dipping sauce of course). But yeah, i'm not japanese so maybe someone would have better ideas =P

      +OmenaOmega I think that's right :) I watch lots of cooking videos and now I came to know that different kind of liqour has different complex taste... and thank you so much for your kind response :) I guess when cooking sushi rice I can use vinegar+sugar as a substitute, just like your suggestion :D

      +Syifa Haunan More than that, cooking sake and wine usually means that the alcohol evaporates, so even if you did use it in your cooking, you wouldn't get the alcohol aspect, just the unique flavor of that particular type.

      I know this reply is a bit late, but if you decide to leave out the sake and mirin etc. make sure to substitute the missing liquid. Also, in another recipe it was mentioned too add extra sugar when leaving out mirin.
