They literally use ingredients to max air in the backed stuff. Which also means less other ingredients needed to make something of certain size. For example the strain of yeast used in Finland is totally different to the one used in France. And here for example - some few pastry -like breads (pains) are such you feel like you ate nothing having something with a small coffee. But if you eat a Finnish pulla (or bulle in Swedish btw.) - bit similar - you know you ate something and it does not even need to be home made to have that quality. There is nothing wrong with having body in your baked goods. It is about how much air or 'gas' one gets into it - all though if a recipe does not include using a whisk or implements to mix it in - then it is not even supposed to be worrying. Spatula alone will not really add air into the mixture. I still would claim it is more wrong in the store brought goods because you are literally buying air in part - if compared with the price of ingredients to amount in one single serving. If your husband likes what you made, then you are perfectly fine - lol.

I'm from Trinidad 🇹🇹. I don't forage but we have lots of fruit trees in our backyard (cherries, five fingers, plum, avocado, green figs, limes, paw paw) we also grow chadon beni, tomatoes, sweet peppers, chive, thyme, mint etc. So easy to pick n eat or cook with.

Baking trick: Use a sifter to put the flour through by holding it a good five inches or so from the mixing bowl, repeat three or four times. When air gets in the flour, it makes the final results more light and fluffy. Enjoy!
This is giving me childhood flashbacks. I grew up in a small town in the Netherlands and we used to forage for hazelnuts, pick wild blackberries, raspberries and climb trees and to pick and eat wild cherries
My German husband is like Max too: when he feels like eating cake, he bakes it. It may be the tradition of cake and tea time very strong in Germany and nordern Europe
This has been one of my favorite blogs to date. I really love foraging and eating locally - right up my alley. Max, I noticed you using a berry rake. They’re really convenient, but bad for berry bushes. I’d recommend picking by hand.

quick tips for fluffy bread, don't mix the egg too long, just enough until the yolk and white are just about blended (preferably mix manually with a whisker, if you can't control it with a hand mixer), that way you get it fluffier. Also, if you want to be extra sure, you can always add more liquid to it, like milk or water into the mix. When it comes to bread that is not using your typical flour, it is always best to mix the acidic ingredients with hand (even a pastry chef does eggs manually with hands). Also since you already have acidic ingredients, you can just skip the baking powder and just use the baking soda instead. Sometimes combining both of them, if not done properly will make bread or cookies denser.

Don't forget to make Chanterelle pie as well. Especially the cheesy type, soooo good. The danish recipe especially the one for Christmas, give that a try ^^
also for those who don't know. Just to add to what Max is saying, in the summer you are also allowed to do your own berries picking/harvesting out on the forest to sell either fresh or after turning them into jam. But there is of course a limit to how much profit you can gain from it per person, to make sure that we don't destroy the ecosystem. If you drive outside the big cities, you will see many little "kiosk" made of wood by the roadside, and you'll see people selling stuff like jam and the like made from the berries they picked.

I'm cracking up watching Maya trying to keep Jackie from stepping on them. Dogs are oblivious. lol When we lived in Finland, we could wander through the woods and pick whatever we wanted. It was awesome.

WOW!!! The video was so soothing... I love seeing people who fully enjoy the simple things in life like walking in nature, cooking and eating. I also love what you said about taking a moment to be grateful before eating, regardless of your beliefs. It makes me want to do it more often and also for other basic, yet very important things like having a roof over my head.
I love this video. A little tip for baking the zucchini bread. Measure the coconut oil at liquid state, not solid. Coconut oil at solid state is actually more than what your measurement is. You can test this by melting what you measure and see the difference. Also, once you add the flower at the end, only mix until you do not see flour anymore. If you overmix the flour, it makes for a dense baked item. These should help with texture. I would still eat it either way! lol
I shred and freeze zucchini in two cup amts and add it to spaghetti sauce or for added nutrition throughout winter. I grow cucumbers, tomatoes, green beans, peppers and various herbs. I used to live down the road from a blueberry farm in WA but have since moved back to CA. Such a huge difference in the store blueberries as opposed to wild foraged!

Love you two! Yes, we must eat & appreciate the food from our land, garden & in the store. We have potted tomatoes, green peppers, yellow peppers, & pepper mint and lots of rosemary!! We enjoy every minute of them.
I love the idea of growing your own, I just can’t handle the insects. By the time I finish washing everything, I keep visualizing bugs in my food😩. But… I’m starting again way above ground, we just harvested cherries from our tree here in Edmonton😆, sweet and plump!
I live in Canada in the city but my favorite thing to do is to drive out to the countryside and explore the forest, foraging for berries and mushroom. It brings JOY to my soul.

hahaha that is a typical scandic man. They all know how to cook and bake, and when they want something, they make it, instead of buying. My husband does that as well. Sometimes late in the night, he will bake cinnamon buns. Boy.... they are the best buns hehe.
True! I'm located in Denmark and so many Danish men enjoy cooking, and really are into it as a craft. Might be the foodie culture or just the joy of creating.

I have seen mushrooms on my walks where I live, but I always let them be. For one, I didn't know if they were edible or poisonous. Secondly, I am not a big cooking kind of person. But that app he has could be useful and I may check it out.

Hi to you both from Vancouver! Wondering if you've considered getting a little pressure cooker/Instant Pot to help power through days when you don't feel like cooking? Meals, soups, stews that usually take all day in a crock pot take 20 minutes after food prep. Just a thought. All the best to your little family x
But it's totally unnecessary because it's a fungus not a plant. You're not able to pull out the roots because the mushroom is just the "flower" of the fungal network that's woven through the soil. Still cute though

I'm in NYC. I bought basil, mint and Mexican tarragon plants at the start of the summer. The basil is growing like wildfire! All it needs is full sun and watering at night. It'll really make you feel like to have a green thumb! We've started sharing bc we have so much. The mint is doing well also in partial sun and frequent watering. The MX tarragon is struggling but holding on.
I really enjoyed this...this is the life I have always wanted to live. Living off the land. Me and my husband recently got into picking mushrooms and found some Chicken of the Woods mushrooms and I wanted to cook it and eat it when we got home but he wasn't sure if it was a good batch we found...we plan to go out again soon especially that we've had a lot of rain recently
Watching people eat when you're getting hungry is the worst haha :D But awesome to see the life you're now living in Sweden. I relate to this sort of living as I've spent a lot of time on the countryside too, yet recent years life has set many obstacles to enjoy that life so I really hope it changes and I could one day grow my own produce. I have one sad chilli plant at home in the city now tho haha.

I got rocky mountain spotted fever from a tick bite. I got it from a front yard..a little over grown but the inside of the house was full of dogs and dirty conditions so I may have gotten bit in the house. Either way, scary situation.

Used to do this with friends when I lived in North Bay Area SF. Berries & mushrooms. Now we live in El Paso, TX.
U can also spread the mushrooms out and allow them to dry in the sun. Get all that goodness🤣👍🏾🥰

To make it less dense once you add the flour mix with a spatula instead of the mixer. You may have over mixed the batter.

We have this system in Finland too, and this year am quite lazy so decided to buy off my neighbours at the market square. Blueberry pies loading 👌

hahaha that is a typical scandic man. They all know how to cook and bake, and when they want something, they make it, instead of buying. My husband does that as well. Sometimes late in the night, he will bake cinnamon buns. Boy.... they are the best buns hehe.

True! I'm located in Denmark and so many Danish men enjoy cooking, and really are into it as a craft. Might be the foodie culture or just the joy of creating.

I have seen mushrooms on my walks where I live, but I always let them be. For one, I didn't know if they were edible or poisonous. Secondly, I am not a big cooking kind of person. But that app he has could be useful and I may check it out.

But it's totally unnecessary because it's a fungus not a plant. You're not able to pull out the roots because the mushroom is just the "flower" of the fungal network that's woven through the soil. Still cute though

I'm in NYC. I bought basil, mint and Mexican tarragon plants at the start of the summer. The basil is growing like wildfire! All it needs is full sun and watering at night. It'll really make you feel like to have a green thumb! We've started sharing bc we have so much. The mint is doing well also in partial sun and frequent watering. The MX tarragon is struggling but holding on.
I really enjoyed this...this is the life I have always wanted to live. Living off the land. Me and my husband recently got into picking mushrooms and found some Chicken of the Woods mushrooms and I wanted to cook it and eat it when we got home but he wasn't sure if it was a good batch we found...we plan to go out again soon especially that we've had a lot of rain recently

I relate to this sort of living as I've spent a lot of time on the countryside too, yet recent years life has set many obstacles to enjoy that life so I really hope it changes and I could one day grow my own produce. I have one sad chilli plant at home in the city now tho haha.

I never go hiking without a hat. I'm so scared of ticks ever since one crawled out of my hair and walk across my face.
I got rocky mountain spotted fever from a tick bite. I got it from a front yard..a little over grown but the inside of the house was full of dogs and dirty conditions so I may have gotten bit in the house. Either way, scary situation.
