Your alfalfa idea is so interesting! I think alfalfa needs cutter bees nearby for it to make seed, out here farmers who grow alfalfa for seed, have many little bee houses out in the fields, and I think they are cutter bees. But I also understand the desire to do it all. I'm planning a strawberry bed this year, using poplar logs as the border. But then I got researching using plug spawn in logs to grow mushroom. If I do both Strawberries and Mushrooms it sounds like a great idea, but suddenly my cost is way up, and I might be trying to do too many new things. The struggle is real
I'm in 3b, about the same growing season as you, so you must have colder winters. I understand for the squash/cucumber. I always start them before too. I like that they germinate on the balcony in the sun and wind, so no need to prepare them to be outside but yeah, about a month or 2 before planting in the garden, I sow them. Too much seeds? Nonsense! Too much fruit trees and shrubs? Nonsense! My food forest is an addiction and I did bought tree seeds that I don't know where I'll put them if they all grow. Have a great season!
I directly sow them in the garden, as soon as I think there won't be anymore frost, and cover if we get a frost once they are up. I don't personally have much success starting them indoors but I'm interested if you'll have success. Last year, I started them mid June and I still got squash, but they were smaller than if I'd started them earlier

Hahaha, so real! I tried mushrooms last year in my orchard last year, didn't produce anything ... curious to see if they will pop up this year!
