I used to buy this from a Mexican carniceria but it was only there on a random basis - and.very expensive. Now I just make it myself with this recipe. Sometimes the chicharrones are not fresh but in this manner it doesn't matter. One of.my favorite tacos ever. God bless this remarkable woman and the gifts she gave to so many.. 🙏🇲🇽

My favorite are Chicharones De Rojo, where I use Tomatoe Sauce to make mine with Red Peppers, and I use the spicy pork chips, I add onions, minced garlic and jalepenos to it too. I usually strain them once I'm done because I put em' in my refried beans once the chicharones are ready. I never add salt to them, just cus they're full of sodium as it is. 😅
