    I love your videos. I haven't had my pellet smoker that long but I have smoked spare ribs on it. I haven't cooked the baby backs yet but I'm wanting to try them. So it appears that the prep and cook times are the same. I did notice though that the pull back on the baby backs were not as dramatic as on the spare ribs. True? There was a little on the bone side but I didn't see much at all on the meat side.

    I've been doing baby backs for the past year and a half and after watching this video I too did a comparison of the two and I am sold on spare ribs. You answered all my questions throughout the video and my family and friends definitely prefer the spare ribs. I perfected my preparation and I thank you for the tips and recommendations.

    Aye Joe good video with the cook of the baby back ribs & spareribs..I myself like to cook the st.louis ribs ..sometimes the baby back ribs too... my question tho is do u think a diffuser plate wld work in the PBC like u hav for your GATEWAY DRUM?? If so who wld make it??

      Hey Dewayne, I've cooked ribs with and without the defuser and it's that that big of a difference...especially when hanging. I would cook without it. 👍🏼

    I have a strange question; I have a longhorn reverse flow. If I maxed out the space with ribs, when I wrap them, can I wrap them stacked so I can add more ribs to the smoker? Looking to do 10 racks

    Awesome job on those ribs. I’m the same, I like baby back ribs but spare ribs do offer a slight better taste so I end up cooking more of those.

    Great job joe!! I noticed u was using ur uds ( GATEWAY DRUM SMOKER ); & was wondering if there is a diffuser plate for the PBC ( PIT BARREL COOKER ) like u hav for ur UDS?? U answered a question I was wondering about between using light r dark sugar during this video ; but my question is hav u ever used TURBINADO SUGAR ( RAW CANE SUGAR ) when cooking ribs ??

      Never used raw sugar but I bet it would work. They don't make a defuser for the PBC but you can cover half of the charcoal basket with foil. 👍

    Did you take the rib tips of the Spare's and take off the smaller ones off the ends? I have been doing baby backs lately because of all of the trimming involved with Spare ribs. Baby Backs, you just pull the membrane and rub. I did two racks yesterday, first time hanging in a drum and OMG what flavor. I think I am sold on the hanging method, maybe my "go to" going forward.

      Hello Scott, I trimmed a little bit off the rib tips just because the bones/cartilage were right on the edge. I really didn't want to trim off a whole lot off of either rack. I just trimmed a little bit of the excess fat. I really enjoy hanging the ribs too.

    Hello Joe I just joined your video page and really like it. Love your laid back style, it's what I like. I guess I could say I'm a baby back guy, majority of rib smokes are those. But this morning Sept. 30 I bought my first pack of spare ribs, 2 pack. I'm going to use my pellet smoker in the morning and use layers similar to yours. I have always used the foil, butter, honey also. Sauced, not always but kinda prefer it. I was thinking don't most bbq restaurants use spare ribs? Seems and looks like them. Anyway i'll be back for more videos. Gary in Dallas.

    Wow very professional video! Keep it up! Question about drum smokers...
    I am thinking of getting a Pit Barrel Cooker, but on their website they estimate its lifespan at 3-5 years. In your experience, does the PBC begin to degrade after using it for many years?
    I want a drum smoker that preferably lasts a lifetime, like my Weber kettle. But is it unrealistic to expect such a long lifespan out of a drum smoker?

      Hello Roco, I don't think they make one for the Pit Barrel Cooker. I have seen where people will cover half of the charcoal basket with foil and hang their meat on the foil side. 👍🏼

    love your cooks, can I assume that you run hotter on the charcoal/stick burners than the pellet I find the pellet gives a better smoke the slower /lower it burns..

      You're correct. The lower the temp, the more smoke flavor. Same applies to an offset smoker but both low and high temps on an offset still give you a great flavor.👍

    Need to get you to try a Hunsaker Smoker. The deflector plate is a lot easier and you don’t have as many variances in temp. Light, set and walk away! Good video tho!

    Joe, I was surprised to hear you say that the Gateway was your "go-to" smoker. I remember seeing a video you did (can't remember if you were cooking ribs or brisket), comparing the Gateway with the Pit Barrel Cooker, and both you and your Mom liked the taste of the meat cooked on the PBC. Has more experience with cookers changed your mind?

    HEY BIG SMOKIN, that was a awesome comparison between the spare ribs and the baby back ribs, man those ribs were smoked to perfection and that sauce looked to kill for, I want to know if I can be your full time taste tester I am cheap labor.     I am looking into buying a UDS and am having a hard time choosing between the gateway drum and the pit barrel cooker. It's just for cooking for a family of 5 in the backyard. Which would you prefer to use for both BBQ and grilling?

      By far the Gateway drum, is much more versatile. The Pit Barrel cooked is a great cooker as well but limited on space.

      @@frankieliles3652 you're really going to enjoy it. The fire basket is nice and remember that you don't have to fill the basket 100%. If you're smoking chicken for example, this may only take an hour so 1 chimney full of charcoal or lump charcoal is sufficient. Now if you're cooking ribs or brisket that takes longer, maybe 2 chimneys would work. It takes a bit to learn how to control the temperature but always leave the exhaust 100% open nd control your temp with the 2 intake flaps.

    Joe, I have a Pit Boss Smoker and I tried twice to make burnt ends out of Chuck roast, both times they came out tough and I followed the instructions from the video that I watched, any suggestions? I bought them up to 170 and then placed them in foil to a temp of 200.

    Spare Ribs for the win..... Joe i go back and forth but do prefer the spar rib over the baby back. its cheaper also !!!

      Hey Ole Vet! 🇺🇸 The sauce is a must try buddy. The UDS kits that are out their are nice and the fundamentals are the same. You might have a different intake and exhaust but I bet they would cook just as good as a gateway drum smoker.

    Why don’t more people use a pellet smoker? I don’t have one, but it seems like it’s way easier and produces the same results as other types of smokers that require more time and expertise. Is it because it’s more of a “sport” or good feeling if you’re able to maintain temp throughout the cook? Honest question. I’m just considering getting a pellet smoker but I’m willing to put in work if the results are better on a side smoker or drum. Thank you, good video! New subscriber.

      Hello Gustavo. Pellet smokers are really user friendly and the food comes put really good. One thing is you will get more smoke flavor on an offset. I love my pellet smoker and it's my go to smoker. I love tending a fire on my offset too.😁👍

      Michael Gutierrez Not my question, but I’d recommend a Weber Smokey mountain any day, pit barrel cooker or similar seem cool too.

      Hello Michael, the Pit Barrel is a great cooker for the money. I would start with that or a nice offset smoker like a Pecos. Do not buy an Oklahoma Joe Smoker as they leak way too much and it may frustrate you more than help. How many are in your family? Pickles recommended a Weber Smokey Mountain which is also a nice smoker.

    I like the spares better for how they taste and I usually cut em, rib tips which make good rib candy and St. Louis cut. Spares are usually cheaper, juicier and better. Don’t tell anyone.

      Hello Dan, I use it to keep the food from getting charred on the bottom. I have cooked without it when I hang a bunch of ribs without issues. 👍🏼

    2 question , what type of pat butter do you using and you don't use the magic blue bottle parkway ????

      When I use butter I use unsalted. Walmart butter is fine. The best thing I use now is Victory Lane BBQ's butter bath. It has everything you need. All I add is some pineapple juice. Victorylanebbq.com 👍🏼

      @@SmokinJoesPitBBQ Maybe you could try pouring the juices from the wrapping into a grease separator and then pour/brush it on the ribs when they go in the smoker unwrapped the last time before glazing

    Spares here. Not a fan of baby backs. Seems most people want baby backs because it sounds cool to say. Like the taste profile they have,

    I would eat both with no complaints.
    It is such a shame real babybacks and thick spareribs are never to be found here. Not sure why -- i mena pigs are pigs no matter where they live hehe

      Right Lasse! Maybe they use the pork loins more than the baby back ribs. What to the butcher's say when you ask them?

      @@SmokinJoesPitBBQ I guess that ahs something to do with it. Not many butchers left here. Almost all meat is sold through the grocery stores, and only a few has over the counter service. Sad really imo.
      I do however have one olace that i go to somethimes that might have some :)

      @@SmokinJoesPitBBQ Yes you are rihgt, its way more common with the loin. I guess that is the reason.
      I have bought a whole loin rack a few times though and guess that constitues half ot the babyback then? :)

    Here is question.. where do you get your meat? Do you go to a butcher? This looks so yummy... and remember "if bbq doesn't go all over the place it doesn't belong in your face"... 8)

      Hello Just8ate! I go to Walmart for all of my rib cooks and Costco for briskets. I rarely go to a butcher shop for meat. 👍🏼 Have a gr8ate week friends. 😁
