Tried the recipe! It's not bad at all. I added more veggies, and, if you like a lot of noddle in your chicken noodle, I would up the pasta quantity by half.
Actually, it can be a lot more easier. (Hungarian here, and expert chicken soup maker kek) You don't have to make a pre-stock, nor bake the veggies and the chicken skin. Put Chicken, carrot, onion (plus ingredient choices can inculde white carrot, regular celery, not the english one, both the root and green part, potato, parsley and you can also add some pork bones with some meat on it) and whole pepper into your pot, put enough water so it doesn't only cover it, but when it starts to simmer away, it will still cover it. When it starts to boil up, turn down the burner to low so your soup will look nice and not bleary. Cook it for about 1 hour (depending on your choice of the chicken part(s)), and done. For noodles, if you do not want to bother with really cooking them, buy some rice noodles, soak them in cold water for 30 minutes (you can do this while the cooking is going on) and then rinse it. Pour the hot broth over it, then pour it back to the bowl. Repeat this a few times, and there you go. Cooked noodles. Enjoy C:

Just a random thought, but it could be cool to make some kind of a chicken noodle soup and tortellini en brodo mashup, where you cook the chicken in the soup and then stuff it into the pasta. It's pretty extra, but I think it could be a really nice form-factor
Some things i can absolutely recommend: Pre-cook the noodles for big pots and only put them into the serving bowl, so they dont get mushy, when you dont eat all at once.
