That certainly is a perc with a twist... sitting on the edge of my seat watching this to see how it actually works. Super cool action. More fun than any espresso machine.
This will give immersion brew -- which is a rather different flavor from percolation like a single-pass drip process. Generally (I'm told -- I only make auto-drip or pour-over, which combine some characteristics of both) percolation gives a brighter, more acidic cup, while immersion goes more toward the complex flavors. The coffee this machine produces should be more similar to a French Press than a percolator (properly operated, a percolator gives nearly pure percolation, with little dwell of the water on the grounds). Most coffee consumed today, because it's made in automatic drip machines, is somewhere in between.
