When making red bean paste my mom likes to use a little bit of barley syrup. Not sure why though, because when I taste it i cant tell if its sweeter or not but it does feel different...perhaps the right term is "mouth feel" ? Or maybe it could just be a personal Asian parent recipe that im not supposed to share.....
My cousin is a cook/chef in Busan and she made something like a taiyaki cheesecake thing that tasted good. The outside was mostly the same but the filling was a azuki bean cheesecake filling 😋. I wish i could go visit just to try out some of her pastries
Whole Foods sells a canned cooked Azuki bean (no sugar added). We add a pinch of salt to accentuate the sweetness when we make red bean paste , AKA anko

I used the pre-made red bean paste in the Foodie frontier "lab" in an attempt to make a layered halo halo semifreddo. Can confirm quality. Sadly the semifreddo fell apart (was tasty though, will try again)
You use baking soda and not baking powder because baking powder contains an acid so it will begin to "rise" or bubble right after introducing a liquid where as baking soda will only react after it begins to starts cooking so it won't be as initially fluffy. For stuff like Muffins or pancakes baking powder is good as it makes for a lighter texture but this batter it would cause it to simply gush out of the form.
Perfect taiyaki!! Indeed, not many Japanese women can cook the red been now days like you did. (we can buy already cooked and sweetened red been paste at any supermarkets) It was very impressive. And chicken in taiyaki is totally amazing arrangement.
I really want you to try this recipe One ripe banana / kesar mangoes / ripe jack fruit Some boiled rice Single cream/boiled milk until thick Milk Powderes milk Start by getting as much rice as you want on your plate, add a few (i put 2 heaping at first and adjust later) teaspoons of dried milk pour a little bit of the single cream or milk (i use 1 teaspoon and adjust later) add your fruit and mash the fruit into the powdered milk and the liquid. Season with salt and mix into rice. Preferably the rice shoyld be warm or you can 30 seconds microwave after mixing You can blend the milk fruit mixture and add your rice later ti make a drink but i personally suggest eating as is. I personally prefer kesar mango over banana and jackfuit as it is a little nicer but banana is amazing for midnight meals or a cold morning breakfast on a day off
homemade red bean paste is so much better than the canned stuff!! it's easy to tell when shops use homemade or not 😭 I love using brown sugar when I make it, also freezes well for a month or two for taiyaki on demand. or if you don't have the fish pan, make dorayaki!

Mind you the gloves I wore tended not to last that long doing that as they'd get holes in the finger tips from burning but hey.
Before the whole pandemic when we had the summer nightmarkets in my area, there's this one stand that made savory taiyakis with a cheese and kimchi filling, and some with shrimp and corn. It was pretty good, and I thought it might give you some ideas to use the Taiyaki pan more in the future!

We have a thing in my state called "Japanfest" which is a celebration of the culture of Japan and it's history..sure there are some weeby things like anime merch (not that I'M complaining lol) and food..I got to try this and Takoyaki..both are AMAZING, I also got some melon pan from a $20 blind bag at an anime merch store..I got it, some strawberry ramnue, and a Monster Hunter figure..and a SWANKY t-shirt in my size that has all the Eveelutions from Pokemon..do you know how rare it is to get a shirt in anything over Large from a BLIND BAG?!? I got to watch a demo from a local Bujinkan Ninja dojo in my state, and the last thing I got to do is hear some classic ghost stories from Japan by a lady who's family told them to her as a kid..it was AWESOME, also the fact it happens in the fall made the last bit even better.
You can find electric versions of both that you just plug in, if you don't wanna fiddle with a stove. My kitchen isn't built for a gas stove so all I have is a coil top electric stove. It's kinda old and a little fiddly now so yeah..one eye burns hotter than all the others and I usually only cook on one single eye cause it can kick off some heat and a southern summer is already hot enough.
@@ShinKyuubi Sadly those electric versions are not always suitable for 220V. not forgetting the only sites that sell em are chinese sites, and the Teflon coating, might not be safe/contain illegal chemicals that are not allowed to be used in the EU
@@darknessblades I've never looked for one on a Chinese site, I found the ones I mentioned just by browsing Amazon for a quick minute to see what kinds of taiyaki molds they have on the US version since that's where I live...heck looking at the UK Amazon they have an electric Takoyaki maker for 220V..you might have to try ordering from Amazon for the US and buy an adapter/convertor what have you but you can find them there.

Check out my Sea Salt Ice Cream video! You can simply use that base. Then when the ice cream is spinning in the machine, add your anko paste. Freeze as normal.
There's a Taiyaki truck called BeanFish that parks across the street from the Uwajimaya in Seattle with 17 different types on the menu, from classic chunky anko to bacon and eggs, spam pineapple, and pepper jack cheese spri kled with sugar, to their "K-Pop" Taiyaki that boasts Kalbi beef, kimchi and Tilamook pepper jack cheese.. even a nod to Milk Bar's Crack Pie.. the "Crackyaki" buttery filling with an oatmeal cookie crust and dusted with powdered sugar. Almost like being in Japan again whenever I can stop by.

Haven’t had one of these in years. Red bean paste is the greatest dessert filling mankind has ever made. I usually make mine super smooth. Next time I make bean paste, I’ll try out the rough version. Makes me want to order one of these taiyaki irons, but I would feel guilty buying a specialised tool that is only used for one type of dish.
I remember when I first tried to make red bean paste..I screwed up and thought I was supposed to soak the paste overnight after I made it...that poor pot...also, sadly sometimes Alton Brown's rule of kitchen tools that can do more than one thing have to be skipped for certain things like this..it's a VERY distinct treat that requires a special mold that doesn't have plates that can be switched out for regular waffles or other similar treats.

250ml milk, add 15ml white vinegar (I know you have that!) and let it sit for about 15 min at room temperature. It's not exactly buttermilk, but it's close.
