    I have a question when I should work with the starter after feeding, is it necessary to do the float test before use it?

      You can do a float test, but some starters won’t float, especially a whole rye or wheat one. So the best way to know when your starter is ready is by looking at it. When it’s rising it has a dome like shape in your container. When that shape begins to flatten it means that your starter has reached it’s peak activity ( at this point you can use it in your dough). Depending on the starter, it can stay “flat” for 30min or more (also a good time to use it) and then will slowly deflate.
      Used earlier than peak, will result in a very slowly rise in your dough ( as the microbes in your starter are not hungry enough) while used to late, when it already starts to deflate will result in a faster rise in your dough as the microbes in your starter are pretty hungry. In my opinion used at peak and 30-40 min after gives the best result❤❤❤
