You could see they were tender. Pork is so clean now that you can cook it to medium. Unfortunately, lean pork lacks some good piggy 🐷 flavor. When I was a kid, my grandfather and his brother had a pig that was ready to be processed. They never used any kind of meds to make him grow faster. They let nature take its course. I watched the whole thing. It was killed very humanely. Pig never stressed out. We had homemade biscuits and fresh pork. No pork today can hold a candle to fresh pork that was allowed to grow as nature intended.
