Looks good bro! Extremely late Hau'oli la Hanau ( happy birthday in Hawaiian.) For me as a Native from Hawaii, if we used anykind of meat, our Deer,wild boar, chickens, mountain goats would do. We even could use dried squid, fish, ect. If it's something domestic, my preference would be Kalua pig. Better if it was cooked in a imu, but a regular oven would do. Awesome video! The 2nd cast iron i never seen a comal like that before i have a really old comal cast iron and theres a lil history to it my great great grandparents brought it from mexico and they came to the USA "LEGALY!" and after my grandma passed on one of my aunts gave me the cast iron comal and to this day i have it i will never get rid of it i remember as a kid seeing it used at cook outs and how the real oldschool way on you know how they make homemade salsa! lol those of you know what im talking about hahaha the days your eyes burned and you coughed! when it was being used but for some reason it never affected the older ladys haha!!
I'd use white tail meat mixed with steak with pepper jack and provolone cheese with lettuce cherry tomatoes seasoned with Chyanne pepper chili powder and add a little sweet heat barbecue sauce for a little extra kick
Water cress would be great with them. It's quite spicy when fresh. You just need to rinse it good. I've never gotten sick from eating it fresh. Cut off the roots.
Didn't get an elk last year. Best not fail this year. There's less than half a dozen steak packs remaining (one of which is now earmarked for these quesadillas).

My grandmother had both of those cast iron skillets. The really shallow one she use to make her home made tortillas.
