    Chef john. Today it happened. I was reading a recipe and it called for "freshly ground black pepper" and I couldnt read it without hearing your sing song voice in my head. I'm officially brainwashed. And I love it.

    I suggest you toast the seeds in a 350 oven for 1to-12 minutes. Toasted pumpkin seeds are so much more yummy..

      The raw seeds roast nicely in the 290ish F. sugar, and you get a beautiful sweet flavor, rather than an overly roasted one, but to each his own!

    hello, chef john, I made this pumpkin seed brittle today, it is extremely delicious my family and friends love it. by the way, I poured the hot brittle directly onto dry parchment paper and used a second sheet of parchment paper on top and pressed it flat with an iron skillet it worked perfectly and did not stick at all.

    Thank you Chef John for all of your pumpkin recipies! I love all things pumpkin! Pumpkin seed brittle? Oh...my...gosh. I have to make & eat this. Pumpkin seeds are my favorite seeds. Plus who doesn't love brittle? 3 degree burns? Worth.

    Yum, I love pumpkin seeds. At Xmas time I make a lot of brittles and rocas. When I say "a lot" I mean about 30/40 pans worth! Not that I have so many friends (LoL) but rather the hubs is a supervisor at our local mill and has fun handing out the candy as gifts. Because I make so much of it at once I was looking for an easier method. The average size recipe such as chef John made (which i can't wait to try!) fits perfectly inside foil pizza pans. Makes for nice presentation wrapped in color cellophane too. The chef wasn't kidding, be ever so careful making this candy.. it's like hot lava!

    There is nothing wrong with high fructose corn syrup. It's just sugar with a slightly different taste. It's got almost the same fructose to glucose ratio as Sucrose (table sugar).

    Nice recipe John! But what could I do if I can't find corn syrup? Here in Spain is very difficult to find (or it's crazy expensive).
    Ay substitute? Just skip it? Surrender to the fact that I can't make this and cry all night?

    oh my God, I totally know this! this is like a street candy in Korea, that we used to see on every street (especially near to school) when I was young -now it's not quite common as it used to be -so sad. Anyways, it's dalgona, you can look it up on youtube :) Dalgona usually is in way smaller batches, round, and we just put a variety of shapes using a iron cookie-cutter-sort-of thing, and if I can get it to cut the candy into that shape, I would get one more for free! but it's so hard, since it really is brittle, so we used to use needles and every way possible for that. wow it brings so much memories

    Asian favorite traditional candy. Same method, but more treats. Roasted peanuts, sesame suger and maltose.

    Wow it looks so much like "pé de moleque" (Brazilian candy) that I'm all willing to try this recipe with peanuts instead of pumpkin seeds.

      So you want to eat Daim? Because without the pumpkin seeds and with a chocolate layer that's what you get. I'm not 100% sure that's how they do it but it sure looks like it to me.

      Daim, Heath, Skor, etc. All toffee bars. They're similar but not quite the same. I make a hard toffee recipe with peanuts and a layer of chocolate, so I'm thinking this recipe will work just fine with a little chocolate.

    Love this recipe! Only 1 thing i will add to this pumpkin pie spice. Chef John can you please make Turkish delight. There's lots of recipe for Turkish delight using Agar Agar,Gelatin,Cornstarch but lots of argument. Some says Agar Agar the best some Gelatin, some Cornstarch,few recipes uses real fruit puree, few fruit juice few only flavour & colour! I will love to see which one you prefer & a foolproof recipe as usual. Thank you

    He is not lying about the burn. I have a good size scar on my right wrist from accidentally dropping a spoonful of peanut brittle on it. It stuck like glue and my wrist continued to cook. Third degree burn!

    My partner and I made Peanut Brittle with a similar recipe. We cooked it too long and used light syrup instead of corn, so it was much harder, but it got better the more days it just sat there.
    While trying to transfer onto a baking sheet, since it was already hardening up, we tried pouring it really fast. In the confusion, I ended up getting some super hot string of brittle on my arm. Thankfully, I was a step away from the sink so not even a first degree burn happened. But I'm pretty sure I was super lucky since it had cooled down as we were transferring.
    But be sure to be careful. This stuff is hot, sticky and can get everywhere if you are not prepared.

    I have a pumpkin brittle recipe and in mine I use less nuts so that I can spread it out as thin as possible. I also add Saigon cinnamon, vanilla extract or you can add Chinese 5-spice. I mean what goes better with pumpkin than spices? The spices really compliment the pumpkin seeds and adds that special something that has people running back for more every time. I also add a little more extra baking soda so it get very airy and easier to eat. Oops! shouldn't have given away my secrets😳.

    *Chef John*,
    I don't know if it applies to every dish, but when I have something in that .*napalm stage* (melted, really hot and sticky sugar, pre-caramel) I realized that the more I cooked, less sweet the finished food got later... does it really happens all the time with sugar/caramel?

    Had to watch this a second time and comment again because it was bugging me. I worked in a candy store 38 years ago and made all kinds of candy and when we made any kind of brittle you needed to stretch it out so you can see your fingers through it on a marble table. If you leave it thick it's too hard to bite into, as if you were biting into a whole tootsie pop. It will break your teeth. Wear some good gloves or use some thongs and stretch it out as much as you can. you won't need to cut it because it will break up easily. That's my 2 cents anyway.

      back in the day you needed to stretchcandys like that to work in air so it doesn't form a solid sugar crystal...but since the recipes now call for baking soda..soooooo..it does all the work for you! :P but you can only really do that with brittles XD

    I made it. This is a very evil candy... I had some, it was delicious. Then I had some more and it started tasting metallic... like I'm eating iron. It was still good, so I had some more and I noticed that my saliva turned brown... and the taste in my mouth became very metallic and my tongue started hurting - there were thousands of microscopic lacerations from tiny sugar crystals all over my tongue and I was spitting blood. x_x

    For flattening the mass you said "any flat object will do". This statement is not accurate at all. For example, sheet of paper or slice of roast beef, to name only two, although flat, won't work.
    Please try to be more accurate with your instructions, because I tried it with perfectly flat slice of ham and now its a mess!

    To avoid anyone hurting them self he didn't show the cold-water method for telling what temperature the candy is if you don't have a thermometer.
