Umami is not that balance between sweet and saltiness. It’s a flavor unto itself and it describes that rich flavor you get from meat/fat/mushrooms.

I love Port Ruighe! Also another cool story about Bonnie Prince Charlie is that when he left Skye, he also left his families' recipe for a liquor as a thank you to the family who hosted him, the recipe for Drambuie 😃🥃
