Codemasters were only ones to do it as good if not better with Dirt 3, Grid 2 and Autosport, same with Criterion in Most Wanted 2012, but after those its seem like it all fell of a cliff with NFS games especially in NFS 2015. Forza was mediocre and only gotten worse with time. It doesnt deserve the praise it gets for sound and other games fail to even match Forza's mediocre sounds. GTA 4 and 5 sound better than most fully blown racing games. TDU3/Solar Crown is just unfunnily bad...

If you use clutch gear changes are super fast and smooth, especially in drag races,you can also rev up and clutch kick.

This depends on the car you are talking about, if it is a muscle car it will be modified with a supercharger . Exotic cars may or may not use supercharger (the Ford GT is an example).
