      Austrian here. Dr. Oetker mozzarella in my childhood. Wagner's Big Pizza (now named differently, I think) was also a family favorite, they had all kinds of flavors in American style, like Texas, Western, Supreme, Peperoni Diavolo and so on. 😅

      @@vincenzosplate No frozen pizza here. Kiiiinda.
      When I'm making pizza dough, I roll them into pies an freeze the dough pie for pie before putting them in a vacuum seal and freeze again.
      Usually the dough could ferment for 48 hours.
      Does that count as "frozen pizza"?

    The line probably comes from when the dough is industrially cut, with big metal circular cutter. Compresses the dough when it's cut

    • @TheMrLapidus
      @TheMrLapidus 3 місяці тому +1

      Yupp, and it is probably done with a soft dough, because it is symmetrical + this is why sometimes the air bubbles are also cut and the dough opens on the edge.
      If it would be done in a frozen stage it would look like a stamped metal: The edge would be ~50% cut and ~ 50% broken.

      Don't know what kind of diet you are on but when I had to be low carb to get a bunch of weight off I was craving pizza like crazy but no grains in my diet. I found a pizza crust made out of mozzarella cheese. It is SUPER rich so one slice will do you. But it is amazing how much it feels like real pizza crust. It is the Fathead recipe. If you are on low fat you might try a cauliflower crust. They aren't as good but I'll bet it would taste good to you right now. A home made Margherita pizza, with 80g of fresh mozzarella, a teaspoon of pecorino, basil, tomato on a homemade 200g dough ball (water, flour, salt, yeast) works out to under 600 calories for the whole thing. You should be able to fit that in your diet if you budget through the day.

    Dr. Oetker may be produced in Canada too, but it's originally a German company. Their "Ristorante" doesn't have a typical pizza dough, it's strangely cookie-like; but at least there is a version with mushrooms and without ham or other additions, which is what I sometimes fancy. Now they've also got other brands of frozen pizza, like the "Pizza Tradizionale" with a more typical dough and "Die Ofenfrische" which isn't fully baken yet, so that it gets the baking finish in the oven. As for flavours, I think I prefer on the one hand spinach, which I always refine with some olive oil and garlic powder and on the other hand diavolo with spicy salami, onions and perhaps peperoncino.

    • @vincenzosplate

    Frozen pizzas definitely serve a purpose, but frankly I stay away from ones with toppings, which can be of very dubious quality.
    I tend to get the best value acceptable Margarita, and then add my own anchovies, chilli, mushrooms, salami, tuna, olives, whatever. Because I KNOW that the anchovies, tuna, and salami I buy are already very good. Blue cheese, goat cheese, even camembert - whatever decent ingredients you have in the fridge basically.
    It does affect the recommended cooking time a little one way or the other (i.e. watery things like mushrooms or fresh tomato will slow it down more than just adding a few anchovies or a different type of cheese)
    @Vincenzo's Plate it would be interesting see a 'How to pimp up a frozen Margarita' video!

    • @mariuscheek
      @mariuscheek 3 місяці тому

      For example, a Dr Oetker (?) mushroom pizza is good with a bit of good blue cheese and a sprinkle of Oregano. Finish with Grana Padano
      Or a plain margarita is good with a few anchovies, good tuna, chillies and black olives.
      If you get their pepperoni one, add some fresh chilli, quite thinly sliced red bell peppers, and a dab of cream cheese here and there (or something like feta or ricotta)

I always thought of this a an island creation and not representative of Italy in any fashion. A funny side note, the Hawaiians are crazy for Spam, and they make a "pizza" with that, too! Chicago makes a peanut butter and jelly pizza! I think the term "pizza", when created outside of Italian cuisine, is really is flexible, meaning any combination of ingredients on top of a disk of dough.

    Industrial pizza dough after fermentation I believe sometimes is folded on conveyor rollers after it is stretched out on the same conveyors before it is flattened to be cut into circles with the offcuts extracted for reuse. it would explain the lines. i worked in an industrial bakery for over 10 years and i assume that it is shaped similarly to meat pie crusts. You cant tell with pastry because it needs to be flaky anyway, bread is a different story. Either that or the topping layer is added on top after par-baking the bottom to avoid burning/melting your top ingredients when you take it home and re heat it so you get a better pizza. Most if not all Aussie supermarkets who make "FREAH BREAD" actually get bread parbaked frozen in a lined box and finish the baking instore, Coles used to do this and still might however i know for a fact Aldi gets there bread delivered fresh everyday at least in the state of Victoria Australia.

    We have really good Frozen Pizzas in Sweden and the best ones right now are ''Coop - Pizza Cheese Trio American style'' and ''Coop - Pepperonipizza American style'' and 'Grandiosa - Pizza X-tra Allt Pepperoni''.. YUM!! You should also add your own sauce to the pizza to make it even more delicious! We also have Ristorante Pizza Pepperoni and it is serviceable to fill your stomach but not a joy to eat, it is ok if you add sauce. The problem with many frozen pizzas is that they are trying to be too much, Pepperoni is usually the best because it is hard to mess up. We got a lot of weird pizzas but frozen toppings are usually not very good when re-heated.

    Dr Oetker Pizzas are super cheap cheap but they fill a gap and taste good. We have Chicago Town which is also good but the tomato sauce is sour which can put a lot of people off.

    I get great reheats on pizza as well it works with frozen pizzas and fish. I cook it in the microwave and then finish it off with a frying pan to set the crust on the bottom. Why the pizza splits? I suggest that they go through a phase where they precook the pizza dough which turns it into a pita bread. Why do that? It seals the dough so the wet ingredients don't soak in and make things soggy.
    With the centerline on the pizza, I am figuring the final roll out goes into a tray to keep it consistent, but allows it to get a little more rise to improve the flavor of the dough. Improving the flavor the quality of the ingredients, double the cross. Add special things to the process and it will add between 25 to 30% of the cost. You approach that point, then you might as well get a fresh pizza locally. Never disrespected frozen pizza because have to keep it a value for the niche of you need something to eat and don't have a lot of money.

    About having pineapple on pizza:
    A couple of weeks ago, we went to an Italian restaurant. I was looking at their pizzas and how much they cost, they were all between 10€ and 15€, all except one pizza... It was a pizza with pineapple and the price was 100€!!
    I showed this to the others and everyone at our table started laughing!

    Interesting, bud sadly only a couple of these are available in Canada. I've had several but none compare to my homemade versions (usually made with flatbread crusts).

      A flatbread crust sounds like an interesting idea, would you like to share your recipe?

    I can't get a single one of those brands in the Western US. The only frozen pizza I have found that I like is the Trader Joe's Naples style. At my TJs it only comes in pepperoni which is fine. I usually just get cheese in a frozen and put my own toppings on. With the pepperoni I like to add fresh jalapenos, onion, and if I have it, pineapple (yes, I know. Don't care.) I like the sweet and spicy taste. The crust on this pizza even tastes good warmed up in a skillet the next day.
