I just made these cupcakes and they are DELICIOUS. I used Hersheys regular cocoa instead of dutch-processed......and used 1 tsp baking powder and 1/4 tsp soda per Stephanie's instructions. Thank you Stephanie for this recipe. I really like your other videos and recipes. You are a very good teacher!

I made these cupcakes but added the juice and zest of one orange to the cocoa powder mixture. In my supermarket they had 70% dark chocolate with an orange mouse filling, so I used 50% of that and 50% of ordinary 70% dark chocolate for the frosting. AMAZING! The balance between chocolate and orange was spot on. I want to thank you too for showing metric measurements as well as US measurements. It makes it so much easier for us guys and girls on the other side of the pond to you.

Made this today, husband loved it😍 I put some raisins and it’s was great!! I hope I can send a pic, mine has perfectly baked and no crack on top, i don’t like the taste of too much baking powder so I put only 1tsp of baking powder and 1/4 tsp of baking soda and salt, for me this taste is balance. Sorry but we have no intention of producing shorter videos. Our videos are not for entertainment, they are for education. We want you to be able to actually bake what is demonstrated and to accomplish that it takes a lot of information. If you were to take a class it would take much longer than our videos and our videos are like a class. If you are looking to be entertained I would suggest you view the other channels you mention.
I'm a beginner when it comes to baking.I've failed multiple times on baking cupcakes because the cupcakes I bake seem to lack in flavor but now I must say that this cupcake is my first success that I consider and I'm so happy right nowwww. Wow, I am so grateful for this video tutorial. This recipe is full proof. For the best moist and scrumptious cup cakes. I added 1 tablespoon of instant coffee and it took the flavor to another level.

I made these cupcakes using Hershey's unsweetened cocoa. The cakes turned out great. The texture was moist and tender (not crumbly :-). For a die-hard chocolate fan, richer taste will need to be required. Thanks Joy of Baking for sharing.

It's good that they're long because you can actually see all the steps, she always tries to show us the consistency of the ingredients, how they should look like at a certain point of the preparation and that is great. I've learned a lot from her because of that. I would beat the eggs or whatever to a certain point and maybe think it was good but then re-checking with the video I could see I should continue a bit more. This is just an example..
Because regular unsweetened cocoa powder is acidic, if you use it in this recipe you should probably adjust the leavening. Reduce the baking powder and add a little baking soda.

Mad props, actually makes 16 cupcakes and easy/accurate weight measurements. Baked nicely after 16 minutes. Would recommend!!! I made a blueberry frosting (didn't try the chocolate one in recipe) but turned out great, thanks!

Yes, you can make the batter with a wire whisk. And you can use 2 spoons to fill the muffin cups. Fill your cups about 2/3 full. If you don't get 16 cupcakes, then you may have to bake the cupcakes a minute or two longer than the stated baking time.

If you are asking what brands of unsweetened chocolate I use, normally I use Guittard, Valrhona, or Ghirardelli.
