Not that I use a scale but you can say I got use to using cup measurements but my daughter uses the scale in her baking. 😊 (It's a nice feeling when your kids are the one making yummy goodies now... 😊) You've been sharing lots of with yogurt recipes, may I ask if I can substitute it with Kefir? If you have a new Kenwood you don’t have to scrape down the sides of the bowl, as well you get a folding beater so you don’t have to fold ingredients by hand. Great recipe can’t wait to try.

Simply look at baking sites, or google the grams for all-purpose flour, or whole wheat flour-etc. Try a favorite recipe and see how it works. You may be a convert. I find wring ingredients so very much faster. As well as being easy to teach children to bake. It’s a winner. And scales have come down in price and are reasonable. At least in my book. Happy baking.

Great recipe. I made the cupcakes, but I had the wrong type of chocolate on hand. How do you store the cupcakes so they don't dry out. I will get chocolate tomorrow, make the frosting and then finish the cupcake. I just don't want my cupcakes to dry out. Thanks for a great recipe.

Typically large holes are a sign of over mixing. Maybe try lightly tapping your pan on the counter after you put the batter into the cups.

Store the cupcakes in an air tight container, a zip lock bag or on a plate covered with plastic wrap.

I don’t reduce the sugar. It will be a little sweeter but I don’t mind that.

Yes, you could do that, although the cupcakes will not be as rich tasting and the color of the cupcakes won't be as yellow.

With an all in one method I find the ingredients mix much more thoroughly if the eggs go in the bowl first, followed by the sugar :-)
This method is all about the texture of the cupcakes, wonderfully moist and tender.
I will use blue buttercream
If i don’t have sour cream what can I use?
You could use plain yogurt or crème fraiche.
What is a substitute for yogurt if you can’t have dairy
