Hi! If you want a creamier carbonara, use only the beaten egg yolks and remove the whites, then add it to cream while simmering on the stove.
Oooo yes love the richness that using just egg yolks gives to carbonara! I typically will use just yolks if I have a plan to use the whites for something (like a meringue or something), otherwise I have a guilty tick about wasting the whites. 😅 I don’t typically use cream in carbonara but I agree would definitely make creamier!

please accept my suggestion from an Italian girl: only use yolks, then pecorino cheese, salt, pepper and if it is too thick add some pasta water, but just some drops and wait a little before puring them into the yolks ( too hot water would cook the yolks and reduce them into cloths)
Cara, da italiana a italiana, lascia perdere. Ogni volta che questa gentile signorina cucina una "carbonara" un italiano muore. Non riuscirebbe a cucinare la ricetta esatta nemmeno per sbaglio.😂😂😂

I’ve never had Sacchetti noodles but, I feel like I would love them. I love wide egg noodles and the big bow tie noodles. Something about the texture that I like. Lol! I do like my pastas cooked through though. Not al dente. Just really have to pull them from the heat in time not to have mush.

Da italiana se posso darti un consiglio, la carbonara non si usa con una pasta ripiena, si usa solo il tuorlo e non ai aggiunge mai e dico mai l'acqua di cottura nell'uovo 😂 se vuoi pastorizzare le uova puoi farlo a bagnomaria ( non so come si dica in inglese ) ma sostanzialmente metti le uva in un recipiete e lo metti sopra una pentola di acqua mentre bolle, l'acqua non deve toccare la ciotola per pochissimi minuti. Ecco 😘

با اینکه اصلا متوجه نمیشم چی میگی بازم کلیپ هات نگاه میکنم ،😔کاش میتونستم بفهمم
La vera carbonara di fa con il rosso dell’uovo, non con l’uovo intero. Poi nelle uova si mette l’olio che forma il guanciale, non l’acqua. Infine quel formato di pasta lì proprio non và bene 😢
