Pumpkin Lasagna:
1 lb Italian sausage
4 tbsp butter
1 shallot
12 sage leaves
15 oz pumpkin puree
1 C chicken bone broth
1/2 C heavy cream
1/4 C collagen peptides
1/4 tsp nutmeg
1/4 C parm (freshly grated)
8 tbsp butter (browned)
1/2 C flour
3 1/2 C milk
1/4 C collagen peptides
2 egg yolks
1 lb paccheri
Vodka Pesto:
3 cloves garlic
1 tbsp Calabrian chili paste (linked in Amazon storefront above)
1 C vodka
28 oz San Marzano tomatoes
3/4 C heavy cream
1/4 C collagen peptides
1 lb rigatoni
10 oz fresh Mozzarella
1/2 C pesto

First dish looked perfect.
Second dish I would have piped ricotta cheese into each rigatoni.. then put a little dot of pesto on top of that… then the vodka sauce… baked… then added the fresh mozzarella on top.. rebaked and finished with the pesto swirl.
That amount of mozzarella in the finished dish would have been too heavy & chewy for me.
Regardless, this was fun. Bon appetite.

Thank you! There are more lactose free products on the market now (cottage cheese, cream cheese, sour cream, half and half, milk) - exciting times! And cheeses like parm and pecorino are virtually lactose free too! 🎉
As far as collagen intake per day, I’ve seen a lot of articles say 15g is safe upper limit but that doesn’t make any sense if one serving of collagen peptides is 20g. My goal with these is to incorporate it into some recipes so that it ends up adding around that 20g serving to your day 🤗🤗 working on a plant-based alternative as well!
