Born and raised in Michigan lower peninsula. Dad used to take us once in a while way up north to buy real pasties. I remember how incredibly excited we were to take that 4+ hour trip. I am so excited to view a real Michigander show her recipe and process for making these precious gems of food, that I am going now to get the groceries to make my own finally after 35 years of dreaming about them. THANK YOU!!!!!!!!

Its so weird being someone from cornwall watching a pasty being made 1000s of miles away XD Its good to know that the food that is literally everywhere you go in cornwall is such a worldwide legacy ;D

Thank you SO MUCH!! I have watched every Pasty blog on here but YOU'RE telling about the dough made it clear to me. FINALLY. Lol. I made dough night before last. If I had known that I could finally make a pie dough that was eatable I sure would've been making MANY pies!! I also don't understand pounds and liters and measurement like that!! So THANK YOU again.

Thank you for taking the time to make the video.
Having lived most of my life in and near Chicago, I can say that no self-respecting Chicagoan would put ketchup/catsup on a hot dog. We might disagree on baseball and politics (and even whether that tomato/vinegar/corn syrup slurry should be called ketchup or catsup), but ketchup (by any name) on a hot dog is sacrilegious. Knowing that, I understand the horror (even if I cannot feel the depth of it due to more centuries of tradition) of a Cornishman or a Cornishwoman who sees pasties being made in this way.
The Cornish pasty has so many impassioned proponents, I know that a properly made one *must* be good. Never having had a pasty in my over 60 years and having little chance of ever seeing the lovely shores of Cornwall, I am going to try, _today_ to make pasties as faithful to the traditional Cornish recipe (as nearly as I can determine it to be) as I am capable. I've surfed the web and read recipes and histories and watched videos for many hours over the past few days. I've even received some personal, in-depth advice from a Cornishman who takes obvious pleasure and pride in this food. Unfortunately, I don't have the advantage of genuine Cornish ingredients. Nor do I have the experience of having tasted a properly made Cornish pasty. Having Cornwall surrounding me would *definitely* be nice, too. (Setting, sometimes, is everything.) Disadvantages notwithstanding, I'm going to make my own pastry (using lard and either margarine or butter (I still can't determine which is more "original," but it seems more old recipes call for margarine) and add rutabaga (swede), potato, onion, beef, salt, and pepper -- and hope I get the seasoning right! (I picked up some finely diced beef at the grocer this time. Next time, I will get skirt and slice it myself.) I'm tempted to try parsley, too, but that seems to be a more recent development, so I'll hold off on that until next time.
As for the CRIMP, well, much as a new Chicagoan must decide if he wants to cheer on the White Sox or the Cubs (I'm really tempted to have fun with this, but I'll leave that for another time), I suppose they should experience both ballparks before deciding. In a similar spirit, I'll crimp some pasties both ways and see which side of the divide I land upon. :-)
According to the Oxford Dictionary (which might not have been edited by a Cornishman),
*pasty* is "A folded pastry case with a savoury filling, typically of seasoned meat and vegetables."
*turnover* is "A small pie made by folding a piece of pastry over on itself to enclose a sweet filling."
So, in the most general sense, a pasty is a turnover with a savory, rather than sweet, filling. That leaves quite a bit open to interpretation. So, much as I love my sons, even though they slid into the abyss of ketchup-laced hot dogs, I hope no one will think any less of those who find comfort in pasties that don't live up to Cornish standards. Feel sorry for their missing out on a higher level of savory enjoyment, if you will -- but at least be satisfied in knowing they still find enjoyment in a less-than-perfect dish.
    Cheers.

I had to laugh, when someone from the UP says it's really cold out there, that usually means it's -20F something below (-30C). Thats when you go out to your car in the mornigh and the seat doesn't sink down at all when you sit on it, it feels like a cold, hard wooden bench seat.

I doubt Liz would have ever used it. My Mom and all my Aunties, including Liz here in the video were old school Finlanders and did it the old fashioned way. Not just a recipe, but a way of life that is quickly fading away. That entire generation is gone in the Kilponen family...all 11 brothers and sisters and their wonderful spouses, and now it's up to us 46 first cousins to keep the traditions and memories alive.

Thanks. Papa tended to save the beers for conditioning his hair. He lived to be 92 and had a full head of silvery hair right to the end!
I remember him going out into the yard of our farm when I was a kid and pouring a can over his head - Red, White, and Blue if I remember correctly (although it could have been a Budweiser too.)
Maybe I should start rinsing my hair with beer!

That's my aunt Liz! She was special. Her laugh! Her stories! One of a kind for sure. Cannot forget Uncle Rudy at the end. Good old Finns.♥️!

Interesting story. They sounded American to me. Are they still with us, or have they passed on? I always liked them with gravy, or just ketchup if they went to work.

@@christopherw4527 The video was shot around 1998. Liz passed away in 2007, about 1 year after her husband died. Finnish blood, baby!

I found this video many years ago. Her recipe is the best. Thank you Grandma Liz for helping so many people. ❤ make pasty’s.

It seems like most of the people who learned to make them shared the recipe the same way. Heat one up in the morning, wrap it in newspaper, and put it in your lunch pail and you had a nice hot lunch down in the mine.

Many years ago my family learned the recipe from the immigrants they met working in the mines of northern Michigan. Having grown up eating the pasties made by my mother and grandmother, I am grateful to the people of Cornwall for sharing the recipe!

2019, I'm a little late to your show, but I wanted to share a few things with you. I grew up in Michigan where pasties where available everywhere. I moved to a part of the country that doesn't even know what I'm talkin about! So, very happy to see this video. Also, if you do a little searching on the web, you will find that most of the cholesterol scare, especially animal fats, was never based on any science at all. It made a great story and everybody ran with it. Including doctors. In the last 5 to 10 years, researchers have found just the opposite to be true. There is no better fat for you than lard. I know it sounds crazy, but it's true. And Crisco is actually one of the worst fats you can get. What we know about trans fats is actually based on science. And Chrisco is mostly trans fat. Very deadly stuff! I'm up in years like you and your husband, so it might be too late for us. However, you are teaching people, and more than likely your children and grandchildren. For their sake, you could look into this and see what I'm talking about?

I believe we shot this in November of 1998 using my grandfather's hi8 camcorder and a couple reflector lamps from the hardware store. I used a dryer sheet as diffusion on the lights, so the kitchen smelled like fabric softener once the bulbs warmed up.

Thank you so much for sharing Grandma Liz's recipe. Her recipe and technique is the real deal. I wonder how many pasty's Grandma Liz has made? I bet thousands.
