For non-reserved tickets, you can actually choose and take any shinkansen. For reserved tickets, if you miss your train, you can just take non-reserved seats in the next train. When the train inspector checks your ticket, just tell him that you missed your train. 😊

If you want to be doubly sure, you can also ask any train staff. Just show them your ticket and they will tell you which platform you should go to. As with reserved and non-reserved seats, if you have big luggages with you, you are actually required to buy a reserved seat. Reserved seats are suggested if you want a specific seat in the train, or if you are travelling during the peak period like the Golden Week or any Japan holiday. Otherwise, if you are only taking the shinkansen for a short ride like Nagoya to Kyoto, and you only have a small luggage with you, then a non-reserved seat is fine. The advantage of a non-reserved seat is that you can actually choose the bullet train you want to ride. Say for example you cannot find a vacant non-reserved seat or a seat you want, you can always wait for the next shinkansen. The schedules of the next trains are shown in the platform. As with reserved seats, if you miss your train, you can still take the next train and just go to the non-reserved cars. You can also opt to go to the JR office and have it changed, but since there might be lines in some JR offices, this option might take up some of your time.
