We recently went on a retreat for Vesak at Blue Cliff Monastery in New York. The Monks and Nuns there are predominantly from a vietnamese tradition, they, of course, eat vegan, but all the food they make is delicious, and they had this dish with pineapple pieces and what seemed like very real fatty pork. I have been searching for what it is, and this must be it. Thank you.
Very keen to make this! I also want to experiment, and try to make lup cheong with the same ingredients but smaller tvp. I really miss lup cheong since going vegan :')

Can you explain what is TVP?
Textured Soy protein. Contains high levels of protein and fiber, and nearly no fats or carbs. It is often sold as crumbs/mince, but here large pieces are needed.

You use tofu to make a snowman. Then you skin the snowman alive. That’s how you get tofu skin. 😂😂😂
