Organic wheat is a somewhat poor performer because of the price premium is less, but the difference between organic and conventional corn isn’t as large anymore also. The value of the cereal crops is that they are a great placeholder as they contribute their benefits to the soil. It’s really important to not come back with the same crop every other year. It’s constant shuffling, adapting and shifting, and what your neighbor is growing is a big consideration as well. I grow seed quality ancient grains for export, along with a variety of other organic grains, from buckwheat, seed rye, oats. It averages out. Good yield and lots of straw! They must pump the cow manure to their fields!
