As a licorice enthusiast from a licorice loving country… WHAT? Tarragon had nothing at all to do with the others?! Anise, fennel, and licorice taste the same because of the same substances. Then there’s completely different spices, like parsley, tarragon, chives, oregano, etc., that do not share substances or flavors. Tasty, sure! Similar? Not at all. Booo!
(spoilers) figuring out that those three are gemstone cuts, and that they wouldn't do "nut cut" and "melon cut" because "they're in the business of making things sound fancy" and "therefore baguette must be the right one, because it sounds fancy enough" IS NEXT LEVEL.
Anethole is the "licorice-y" flavor of anise, but for me the main taste of actual licorice root (like the kind that you find in a lot of herbal tea) is glycyrrhizin! Wikipedia says it's 30-50 times sweeter than sucrose, which is why it's so good for making tisanes that are naturally sweet (and not really all that "licorice-y!").
