    Pineapple Cashew Fried Cauliflower Rice
    Serves 2
    Prep Time 30 minutes
    Ingredients
    2c Cauliflower Rice
    1/3c Red Onion (small chopped)
    1/3c Red Bell Pepper (small chopped)
    1/2c Pineapple (medium diced)
    1/2c Cashew (rough chopped)
    2T Cilantro (chopped)
    2T Scallion (chopped)
    1/2 Avocado (medium chopped)
    3T Tamari/Coconut Aminos
    1/8t Cayenne Pepper
    1/8t Sesame Seed Blend
    Sea Salt tt
    Black Pepper tt
    Mix all ingredients in a large bowl until all vegetables are evenly coated with tamari or coconut aminos. Season lightly with sea salt and pepper if needed. Allow 30 minutes ro marinate. Serve.

    This was so good. I haven’t even marinated it that long, (it is now), but it’s so good! I bought one of your books the one with the raw lasagna in it and have made it several times and it gets better and better. Thanks for helping me in my go raw vegan journey. :)
