- This recipe is a delicious vanilla cake with a mandarin glaze and light frosting recipe that is low fat and healthy vegan. This recipe has fresh fruity mandarin and with a secret pear flavor.
Recipe
Vanilla Cake
Dry ingredients
1 cup Whole wheat flour
1/2 cup coconut flour
1 tbsp. cornmeal
1 tbsp. flax meal
3 tbsp. monk fruit sugar or raw cane sugar (or both I like using a mix of both)
Wet ingredients
1 cup almond milk
2-3 tbsp. water ( may need 1/2 cup go little by little until batter is completely smooth )
Mandarin thick glaze
1 can mandarin ( strain the mandarins)
use the syrup to make a thick slurry.
1 cup mandarin syrup or juice
3 tbsp. cornstarch
blend after watching the video and following the steps.
add to a sauce pan and add another cornstarch slurry
add 4 tbsp. cornstarch and whisk it in the blended mandarin.
REALLY AMAZING FROSTING low fat and healthy vegan
2 cup walnuts ( soaked for 1 hour or so)
1 can pears ( drained and leave in the fridge to chill for 30 minutes)
3 tbsp. raw cane sugar or monk fruit sweetener
Cake syrup for sexy Gloss
1-3 tbsp. of maple syrup
4 tbsp. water
Sugar syrup
1/3 cup raw can sugar
1/3 cup water
Boil and reduce by half, then allow to cool completely
