How To Make Simple Ghanaian Chicken Stew

- In this video, I will show you how I make basic Ghanaian chicken stew.
I love these kinds of stews because they are very versatile, it can be eaten with rice, but also with potatoes, yam, and even spaghetti or plantain. You can make a allot at once and it's quite simple to make!

INGREDIENTS
Chicken +/-600g
Ginger (approximately 80g)
1 Scotch bonnet Pepper
2-4 Cloves Garlic
2-3 Onions
1 -2 Magi cubes
Salt to taste
4 Cups Vegetable Oil (Approximately)
1/4 cup Tomato paste (70 gr.)
1 Tablespoon Powdered Pepper
2 Cans of Tinned (plum) tomatoes
1 Tablespoon Cumin Powder
1 Tablespoon Curry powder
INSTRUCTIONS:
1. Wash and clean the chicken. Blend the Scotch bonnet together with one onion, garlic ginger, and a little water to help with the blending.
2. Add the blended spices to the meat, add magi cubes and or salt to the meat. Cover the pan with its lid and let the chicken cook for about 15 - 20 minutes.
Instead of using fresh veggies you can use powdered spices to steam the chicken.
3. In another pan heat vegetable oil over medium fire and fry the chicken. Remove the chicken from the pan when you're done.
4. When you are done frying the chicken you can use the same pan to fry the onions for about 2-3 minutes.
5. Now add the powdered pepper and let it cook for another 1-2 minutes.
6. Now add the tomato paste and mix it with the fried onions
7. While the onions and tomato paste are cooking, blend the tomatoes and then add it to the stew. Let the stew cook for about 7-10 minutes.
8. Add the spices and salt.
9. Let the stew cook for about 5 - 7 minutes then add the fried chicken
10. Let it cook some more until the water in the tomatoes evaporates and the stew gets a brownish color.

i made my own chicken stew first time with tips from this video, thanks! i used 4 red long finger peppers, 2 red bell peppers, 6 big toamoes, and two scotch bonnets, i find blend all that together makes a real good sauce for the chicken. when the slap drains from cooking dont forget to add tomato paste! about 4 table spoons

I love this dish! I did make few changes though lol. I added extra curry powder and cumin plus I added some jumbo seasoning and dry crayfish seasoning from the African store. Also, I fried the chicken in vegetable oil then I made the dish with olive oil to make it little healthier. Lol my Bengali self added some fresh cilantro at the end too and it turns out amazing every time:)
Also, if you like extra spicy food like myself I recommend blending habanero peppers with the tomatoes and I blend one red bell pepper with it too to give extra flavors.

Yes I do but it can be used in the stew

what do you do with the initial mix of onion water scotch bonnet garlic and ginger? the one the chicken is initially steamed in? the chicken is removed from it to be fried. do you discard it?

Do you just discard the ginger mix after boiling the chicken?
I discharged it. However, you can use it in this recipe. I would add it after frying the onions. You could also freeze it in an ice cube tray so that it can be used in other dished.

Yes, I sometimes use powdered spices to season the meat. Sure, you can leave out the chicken.

Sure you can, in that case I would steam it longer (until it's fully cooked)

why not? quite sad to see a curry without an oil stain...

I often use powdered bird eye pepper but any other chili powder will do

Thanks! Perhaps it helps to try a different (non-stick) pan? You could also consider deep frying it with a deep fryer basket

It is powdered African bird pepper, I got it from my local african shop
No body puts times on here, every video i go to, 10 mins , 20 mins, i keep burning this stew , no matter the lowest temperature. I need time and the measurement that your putting in. Am American i need a step by step process.
I feel your pain. All I can say for now is keep trying and before you know if, your stew won’t get burnt. You can keep stirring the stew every five minutes and then when you feel it’s almost cooked, put on low heat, cover for about 15 mins, come back to stir until it’s fully cooked. I hope this helps. My mother taught me how to cook without timelines. Naturally, Ghanaians know when it's time to do what. It's a typical Ghanaian way of cooking. With practice you will get to cook without burning the food or applying time to how long the food should cook. We usually don't leave the food; we stay and monitor till it's done. Good luck in your cooking.
Use a heavy bottom pan to cook with....Just keep your eye and don't leave your pot for too long ....

For some parts you could use water. Might do a video on how to make this with less or no oil
