Hello! Standard 80cm length and 20 degrees angle should be good for you, but you can also consider shorter blades if you're planning on diving in shallow waters. Regarding the care, just don't leave them under direct sunlight and try not to hit them against rocks and corals.
2:26 and 2:39 actually the bend of the 33 angle one and the 20 angle one looks _exactly_ the same. Just open these two times in the video in separate browser tabs and pause the video, and switch back and forth between the tabs to compare the screenshots.

Stick with standard 80cm length. You dont need shorter fins. longer length = more stroke and power transfer. Get 100% carbon fins you wont regret it.
