Simple and delicious! Thank you. Just a tip - I make a plain chicken and rice similarly - after searing the chicken on both sides, remove from pan - and begin the rice - add the chicken on top of the rice and it will finish cooking and stay super moist with the rice and you only use one pan. :) Just hadn't thought to make a mexican version. Love it.
Try it with sautéed green, red peppers and onions 😩 so good

I either saved them to make pasta sauce or discarded them. Just depends what my menus are.
