    📌 Ingredients for a 24 cm paella (2 portions)
    200 g mixed seafood (shrimp, squid, clams, octopus, etc.)
    100 g scallops (preferably boiled)
    50 ml olive oil
    ½ onion
    ½ bell pepper (red)
    2 cloves of garlic
    60 ml pureed tomatoes
    ½ teaspoon paprika
    salt and pepper (to taste)
    400 ml fish stock (or vegetable stock)
    8 g of saffron threads
    120 g Arborio rice
    lemon (for serving)
    fresh parsley (for serving)

    🔪 Preparation
    Heat the olive oil in a pan over medium-high heat and sear the seafood here for 30-40 seconds, no more!
    Remove the seafood from the pan and set aside. In the remaining oil, put the finely chopped onion, bell pepper and garlic. Saute them, stirring occasionally, for 3 minutes.
    Add the tomato sauce, paprika, salt and pepper, then pour in the fish stock and saffron threads.
    When the soup in the pan starts to boil, add the rice and turn the heat to low. Stir just enough to settle the rice in the pan and let it cook for about 10 minutes, until it has almost absorbed all the liquid.
    Place the seafood on top and leave the heat low for another 5 minutes.
    When all the soup has been absorbed by the rice, turn the heat to high for 2 minutes to form the socarrate layer.
    Put the pan aside, cover it with baking paper, then with a kitchen towel and leave it like that for 5 minutes.
    After the 5 minutes, remove the napkin and baking paper, sprinkle with fresh parsley and serve the paella with lemon wedges on the side.
