  • Ingredients I used (5 ~ 7 kakiage tempura)
    ~ Kakiage sauce ~
    : 50ml dashi stock
    : 1 tbsp soy sauce
    : 1 tbsp mirin
    : 1 tbsp sugar
    ~ Kakiage ingredients ~
    : 80g shrimp
    : 80g thinly sliced onion (1/2 onion)
    : 80g carrot (julienne)
    : Mitsuba leaf
    ~ batter ~
    : 1 ~ 2 egg
    : 70ml iced water
    : Flour
    : Spray gan
    Sake & potato starch for shrimp preparation

    I'm always encouraged by people from other countries... Especially when I was a college student in US in 90's, my friends taught me a positive sense of worth. Haha I just recalled those days....

    This whole video was one funny thing after another but the "Unidentified Frying Objects" bit at the end got me. That was great.

    We made it tonight and OMG !!! So tasty so yuuuuuummyyyyy !!! And this sauce !! We used beef broth instead od dashi and watercress instead of mitsuba. Thank you so much for your recipes !

    In America, fart jokes are funny due to how they often come at an inappropriate time & place. It's something so simple yet there's tons of comedic possibilities w/ it.
    So being a weird American, I was dying when you de-veined the shrimp. But I totally understand where you're coming from. Japanese humor is miles different from American humor.
    I thought it was funny though! XD

    Runny san, your technique is Mekara Uroko. I could never make Kakiage crispy without too much dough in the past. Mine was always doughy and not very tasty. I will definitely try your technique next time on. Arigatou!! I love tempura in any form.

    i don't know about anyone else, but i watch cooking videos to relax. i like reading the comments section afterwards to see the compliments, constructive criticism, or suggestions people have left. the fact is, opinions are like assholes... everyone has one. i know there are some dedicated Runny fans out there, but c'mon guys. senses of humor vary for different people. Runny has a playful sense of humor, and if there are people who don't approve of it then that's cool for them.

    Man you are so funny. I love watching your videos. Your cooking tehcnique is simple and clear. I've tried so many of them: hambaga, ebu furai, okonomiyaki, gyu and katsu don. My hubby LooOved it (he's Japanese, he said my cook taste fine). Keep posting recipes! Regards from Jakarta!

    Too complicated? Don't worry, if you are not that picky, all of them will work ok on my recipe where I use them. When I mention mirin in my video, most of time I just use mirin-type or mirin- flavored.
    Some of real mirin (本みりん) can be drunk itself like you enjoy sake. But mirin- type & mirin-flavored are usually considered as only for cooking. I'm not sure about their color difference though... but I think real mirin has darker color than others. Hope this help.

    if i were you, i would add taro strips as well. my mom does something like this, and the taro gives it such a good flavor!

    Thank you RunnyRunny for an another awesome video, I love when you use the last minutes talking, and those unexpected things happens like words and stuff ^__^ It makes me smile. In Denmark people would probably use shrimp or maybe thin strips of ham, many Danes don't like squid to much ^__^ Thank you for an awesome and funny video.

    I love shrimp! Squid is good too... Shrimp is probably more available where I live though.
    Also, what is mirin? I can tell it's a kind of alcohol but is it like wine or vodka? Anything similar to replace it with?

    shrimp have two digestive tracts there is one on the other side of the shrimp and sometimes that one has more crap in it than the one on the back.
    About the spray of egg - - what did they do before they had sprayer gizmoes? Just brush on a dab and toss?

    Also I don't really find any of the sounds you use in the video annoying, just entertaining. And genius way to deveined the shrimps, after watching your video I also deveined mine like that, much easier.

    I love your recipes! You make stuff easy for us on the other side of the pond. I have a question for you though about mitsuba leaf. I have never seen it for sale where I live. Do you know if it is related to cilantro (coriander to Brits)-- it kind of looks like it?, but so does flat leaf parsley, which is not remotely similar.

    The one that I used in this video was actually not real mirin. It's mirin-type liquid (みりんタイプ) which has around 10% alcohol. But real mirin (本みりん) has around 15 % alcohol (almost the same alcohol content as sake). And still there are one more liquid called '' mirin-flavored ''(みりん風味) which has 1 % alcohol.

    Those veggie+shrimp fritters remind me a little of the Filipino ukoy (or "okoy") that my parents like making. The batter is thicker, and the fritters consist of bean sprout or squash. (My parents prefer squash, and Mom even adds string beans when she makes it.) We also don't cut up the shrimp--Mom even puts them in the fritters whole, with the head and shell on. We dip the ukoy into white vinegar with minced garlic, salt and pepper mixed in.
