It's pretty common to get a degree in Hotel/restaurant management when you are learning from great chefs on the job about how to actually cook. It's the better way to do it if you want to be chef/owner. School can teach you the business aspect, but culinary school won't teach you much as far as how an actual fast paced kitchen works. If anything it kind of ruins people. So many times young cooks come in out of culinary school and you have to completely change their mindset, they think they should do it the way that they learned, one dish at a time. In reality it is teamwork, timing, multitasking, lots of great dishes coming out at the same time and at the right time. Most culinary schools don't teach how to do that little dance.

The whole series was worth it for the Hotel Chester. It was just a story of good people dealing with tragedy and hardship with just no way out. I worked in a hotel earlier this year. When people make the beds for yhe new guest, they will first strip off the sheets and outside pillowcases from the previous guests' use. Then they put on new sheets and new outer pillowcases on the old stuff. The mattress pad, comforter, and inner pillowcases on the bed are rarely replaced. One of the Heads of House (middle management housekeepers basically) told me when I worked there that she was in a meeting where the manager had complained that I took too long, and my Head explained on my behalf that the only reason it took me so long to make the beds was because I was regularly going to the supply closet at the end if the floor or down to linens to replace the heavily stained comforters and mattress pads. No one else had apparently been doing that even though it was supposed to be a part of the job. Next time you book a room for any hotel, I advise to request that the bed or beds get new pillows and comforter. You can say it's because of an allergy if you feel the need to.

@@DeathnoteBBomg I’ve worked at hotels if you say “I have an allergy” no one is saying “PROVE IT” you just accommodate them. Are we supposed to allergy test each customer? No. If someone is anxious over getting sick because they don’t replace anything (they don’t) and they don’t want to get nervous, that’s a fantastic excuse. Also blood doesn't flouresce unless you spray luminol onto it, so it's unlikely any of it is blood unless he's spritzing luminol, which I didn't see. There is so much nuance in the way of running hotels and even more in tourism in general. We had to go through a certain amount of hours working in a hotel as maids, servers and receptionists and none of it is easy to do, let alone to manage. I hated it, and instead of continuing my education in hospitality, I now have a masters in publishing and information science, because I knew that I would be bad at whatever work I would do in a hotel lol

just wanna add that, at least in Canada, a lot of Colleges group Hotel & Restaurant Management into one course and you learn about both because there is a big cross over in the industries. Adding onto that, I took one of these courses and people actually in the industry value experience far more than schooling when you look to work in these places. Even when there weren't guests there was still daily cleaning to be done, maintenance to be done, and every week a deep cleaning was done in every space and room. Then when we did have any guests a lot had to be done, even with just one room being rented out. These people trusted me access to their private space to do daily cleaning and turn overs without messing with their things. This lady hired me for the job and I'm amazed she trusted me to do it for her. Starkville, MS, where Hotel Chester is, has been a second home to me for many years, and I've even had the pleasure of staying in Hotel Chester post-Ramsay. It truly is a lovely establishment, such that I regret only being able to stay a single night. When I heard you bring it up, and you flashed the picture of it on-screen, I audibly gasped. I had no idea that Hotel Chester was one of those visited in this series, and I'm happy if it brought even a small amount of traction to the city.

I am by no means a professional(only basics of food and beverage management and was servsafe certified which doesn’t say much in the restaurant business anymore) but most things Gordon is seeking in the hotels are the basics that you are to keep an eye on in your dining rooms along with many a few other things that can be just passed off as common knowledge. Like you said these things can easily go unnoticed to the people who are in there often when there isn’t enough hands on deck or enough properly trained staff. It’s a very vague line it seems so yes he does help but definitely more in the way a friend who has own a plant for more then six months can help. They’ll be able to tell you basic care and needs of that plant but may not be able to tell you the knowledge of an person who has actually went to school for botany/herbalism. As you can tell my passion for food turned into plants, that’s why I haven’t care to renew my certification because I’m focused on learning plants so I can sell them as my job instead of working food again.

Ok so I used to live in Southbridge, MA where the Vienna was located, and I lived there at the time of filming. First of all, a little background on Southbridge: it’s an old mill town, very blue collar that’s had a couple of decades worth of bad luck and bad publicity, but it’s still a sweet little town with strong community. It just so happens to be the brunt of a lot of local jokes. It’s also right next to a very touristy, quaint historic “New Englandy” town called Sturbridge. Think Pawnee vs Eagleton in Parks and Rec. Now, I remember watching the episode and cracking up laughing because in order to make Southbridge look good they filmed the B roll in Sturbridge. I’ve spoken to several folks that worked at the Vienna and they said that the Swingers rumors were absolutely true lol. It seems like they exaggerated some things for TV, but everything that happened was more or less true. The owners also had a French bistro in town where they were notorious for refusing to give you butter to go on your bread because they found it insulting that you would need it? Or something equally as dumb. Regardless, they were at least as difficult if not more so than they were portrayed on TV. I think I heard there were some rumors that the reason the Vienna burned down was for insurance reasons, and possibly to do with funding the other restaurant. I have no way of verifying that last part, although it wouldn’t shock me.

Had all this fancy modern stuff that Gordan said made it look like a race car?? And a lot of use of greys and red. They had a dog ,which I remember playing with in the upstairs area with a little Jake the dog toy. And I remember Gordan called him ugly in the episode. I only skimmed the episode . The hotel from what I remember was just ok. We slept on air beds because they didn't have enough beds in a room for me and my sibling. Just for my parents. Don't remember having an issue w that though. What I do remember is that there was some bar outside . Or club . And they were loud..LOUD loud. And no matter what we did we couldn't quiet the noise. I dont think that's the hotels fault tho . Overall it was an OK stay but I was a kid and don't remember a lot

Gordon makes me think about when I was a kid standing in front of the mirror trying to practice displaying emotions. I feel the underlying, "I could give a fuck less if they sink or swim, but I gotta show it like I care."
I think he cares deeply about the food, but everyone else? Well, they're not food. Like his passion for food, kinda dampens his approach to people. He calls someone a creative insult without barely knowing them, and the gives the line, "I'm not mad, I'm just disappointed." His insults feel personal, because he's so offended by the food, and for the food, and he's a justice warrior for food. I respect that.
He's also to gourmet to understand a grill cheese, which I find endearing.
"It's smoked gouda on an artisanal tuscon bread with saute'd shallots on a bed of spinach with thin slices of genoa salami," or something like that. I've watched try to make one like three times? And he always fails because he get's all paranoid because a grill cheese seems boring. He doesn't seem to understand that grilled cheese is a like a girl who loves big comfy sweaters with sweatpants: She's not her to impress you.
