    Today we will be making Onion Pudding, made with onions and a few simple ingredients.

    ONION PUDDING
    Ingredients:
    1 Cup flour 2 Tbsp Butter 2 Tsp baking powder
    1/3 Cup milk ¼ tsp sea salt 1 Med. onion grated fine
    Method:
    • Mix together with your hand, butter and flour, baking powder and salt.
    • Then grate onion into mixture and fold in milk to make a soft dough.
    • Grease a pudding bowl, earthenware bowl, put all dough into it and cover with parchment paper or foil.
    • Or use pudding bag and place on a grate in your boiler to steam in small amount of water.
    • In a boiler add hot water to cover bottom and place a grate or foil pan in bottom then had your pudding.
    • Cover boiler with pudding inside and boil for 45 minutes to hour, check centre before removing from boiler.
    • When steamed remove from boiler and put on to a plate, serve with jiggs dinner or roast dinner.

    My Nan made this for us when we were kids. I got the recipe from my dad and I make it for my son now when we have Irish Stew. It’s the best with cooked dinner or stew. Nice to see it represented here Bonita!

    I've been looking for a recipe for a savory steamed pudding. Thanks, Bonita!
    I've been making dessert boiled and steamed puddings for many years and recently began to wonder about making a savory pud to have with meat. I think I will try one of these puddings, but include some finely chopped celery and some of the usual seasonings you would find in poultry or meat stuffings/dressings. Perhaps I'd use sage, parsley, thyme and just a small bit of ground rosemary.
    I have been thinking of gently sauteeing the onions and celery before adding them to the pudding to make certain they are cooked enough. This can be an issue in making stuffing. Maybe by steaming the pudding for an hour that won't be a concern.
    I've also been thinking about adding corn meal or bits of corn bread to a steamed savory pudding, rather like some turkey stuffings in the US. I've been searching for corn meal or corn bread used in steamed puddings but corn meal and corn bread is not well known in the UK, where many steamed puddings originate. Just more gastro things to experiment on!

      Hi Alean: Thank you for your message and for visiting my channel, that is a good question. Pressure cooker is quick and it only takes 30 minutes to cook a Jiggs dinner, so this may only take 5 minutes to cook. I don't have a pressure cooker and have never cooked with one, so we can see if one of our viewers made a pudding in their pressure cooker. I hope this helps, enjoy. Bonita

This would help fill you up faster and it will stay with you longer then just having stews or soups. I still to this day like having a steamed or baked pudding with a meal.     bonita i never heard of "boiled puddings "until i saw john townsends u tube channel a few yrs ago...hes in maryland and has a 18th century store for reenactors... the channels is now townsends. he also is a HUGE, HUGE wealth of info on the 18th century cooking and has also got MANY BOILED PUDDINGS if you care to chk them out..hes pretty awesome;];];] its a nice "change up" from modern dishes;];];] great job as always,....     We would take this same recipe and put it on top of a roast while it’s cook. Or in a separate pan and cook until it sounded hollow. We would cut it and pour gravely on it.

    Hi Bonita: Yet another lovely recipe that looks delicious. My gran used to make onion sauce with lamb and the next time I have a leg of lamb, I’m going to try onion pudding. I know you make recipes from your followers’ requests and I have one for you. It might be unfair but seriously, I have always been intrigued by it. The recipe is for seal flipper pie! Do you ever make it? Have you tried it? It must be a real delicacy amongst Newfoundlanders. Once a year in Toronto, there is always a limited supply of frozen seal flippers which run out in no time. Newfoundland expats buy it to some controversy but that doesn’t last long. Anyway, I hope you are safe and sound in this latest snowstorm. Cheers, Colin.

      Hi Colin: Thank you so much for your message and for your video request, I have had many request for this and my parents have made flipper pie before and I do have their recipe. But I don't feel comfortable cooking this on our channel because of all the stuff about seals and its not something that people will be interested in or would make at home. Years ago and still some people in small communities would cook seal and use every part of the seal for their livelihood.       Bonita's Kitchen Hi Bonita: because of the sensitivity of cooking seal, I did think it unfair to ask you but also thought it would be a novel idea. With all the crazies out there it definitely would be unfair to request such a recipe and rather than you being the brunt of very nasty messaging, I withdraw my request. I did, however go online to check it out. It appears to be any stew we would make with the addition of the seal and pastry top. I find it is not my cup of tea. I appreciate your writing back to me.     This one is on my menu for today. Along with a nice beef chuck pot roast I'm doing on the pellet smoker and some glazed carrots. Why? Because my new first ever pudding pot came via Amazon yesterday and the pellet smoker on Saturday - lol

    gonna have to make this one. I went to your page and couldn't find just plain ole bread pudding. Mom use to put it in her cotton bag and put it in with the jigs dinner. Do you have a recipe like that?

    I’m fr NL but I use 4/5 slices broken bread add water n follow off with the rest off ur ingredients.also I add sugar,,

      People Talk Like That In Newfoundland. Newfoundland Was Always Under The Crown Of The U.K. And Joined Canada On 31 March 1949 ..

      Hi and thank you @@mgtowp.l.7756 , I'm from Newfoundland and we were apart of the British decent before 1949, I have a strong Newfoundland accent with a little mix of the main land. We lived away for 30 years and just recently moved home in 2014. Thank you for your question....Bonita
