Carla's Crunchy Feta Salad

- You could give me this bowl of snappy vegetables topped with slabs of feta for dinner every night of the week, and I’d be happy. Half the point of this salad is that it contains a simple technique to make crispy ingredients the crispiest they’ve ever been. The trick is a cold plunge in a bowl of salted ice water. It will enhance already-crisp veggies and revive lackadaisical ones. Even a 5-minute soak is enough to stiffen and season the types of vegetables I call for in the recipe: radishes, cucumbers, fennel. That list could just as easily include celery, carrots, asparagus, snow peas, and red cabbage.

Before they had invented plastic salad spinners, I would put the greens and vegetables into a clean bath towel, go to the back yard, and swing it windmill style just as you did. (Be careful not to injure the rotator cuff.)

Ohh this looks incredible! I was doing online grocery shopping while watching and ended up adding all the ingredients I didn't have to make this! Urfa pepper is always in my spice drawer, I got obsessed with it when I was pregnant in 2020, even sprinkled it on mashed potatoes with butter, don't ask :P
In our Danish family, we ate a lot of Agurkesalat, using the icy salt bath to crisp up the cukes. This salad is far more tasty looking. Thanks so much for showing us some pretty salads.

The only dish with feta I've ever been able to stand is tyropita. Probably because the feta was mixed with something that took away it's basic taste. And filo dough is great stuff.

Amazing 🧊 I’ve made something similar when we absolutely needed a salad with dinner but I didn’t have lettuce. I just scrounged for crunchy vegetables and whipped something up. Nice to have a recipe and some tricks up my sleeve for next time 😉
Dried mint can usually be found in natural food stores in the bulk herbs and spices section - way cheaper than little spice bottles from the supermarket.

Honestly I would usually sub it with the things she’s adding. So I think all you’d miss is some of that moisture it brings. Zucchini is very similar! Maybe some jicama or turnip.
great suggestions-jicama, turnip (which is in radish family), kohlrabi, celery, or use increased quantities of the things you do have.
