    Man that looked glorious on Instagram, but seeing that shank practically dissolve in the video is almost beyond words. And Scott's sauces are so good. I love that Sweet Memphis :)

    Beef Shank is one cut I haven't tried. That is one awesome bbq sandwich. Cooked to super tender in that braise with those onions. Have mercy I wished I had one right now. Bro, Thanks so much for using the sauce. Your reaction after biting into it was confirmation enough. That's what it is all about when you can put a smile one someone's face and get mmmmm along with it. I'm truly humbled!!!

    Good job man.....ya 40 isnt lol. We in boston right now is in the 30s, but its slowly getting warmer. Love the cook man. Gonna have to add a beef shank to one of my many bbq days this spring and summer.

      I thought we were done with cold weather. I was wearing shorts and short sleeves Saturday, and overnight a front pushed in with rain and colder temps. It was only in the 40's but that wind and damp air made it feel much colder. Yes sir, try you a beef shank one day. They are kinda hard to find but well worth the effort when you do.

    That was a lotta shank. It cooked up nice and tender in the new SNS Kamado style. Like the way it held temp. That beef turned out very nice. I had some of Scott's Sweet Memphis and it is an excellent sauce. Matador sure has nice lookin meat. Good cook. Like the new hats.

    The only things I would change are:
    Using the braised on that Kaiser roll.
    Using a spoon of broth in the top roll and anudder in (LoL) on the meat before the BBQ sauce.
    To my way of thinking, tomorrow I visit my butcher. This weekend, we cooking some pulled moo-moo shank (I ain't talking about some big women's leg, either).

    Great video. We celebrated my birthday March 28th so the wife and I decided to have a steak party, so we ordered some hanger steaks from two different companies. Lobel's of New York and Matador prime steak, I have to tell you I was really surprised with so many great reviews that lobel gets that Matador prime steak the hanger steak we purchased from them won hands down with everybody at the party. All my stake purchases will be coming from Matador prime meats from now on.

    What was starting weight of shank and what was yield. Any Idea what one would have to pay per pound if you can get your hands on one. When you were pulling and separating I was drooling that is definitely good reminds me of way I've had leg of Lamb, I think what ever renders down is like beef Jello and extremely flavorful. Great Job Russ.

      John I don't know exactly what the shank weighed, it wasn't labeled and I didn't weigh it but if I had to guess, I would say around 5 pounds. After removing the bone and discarding the surrounding fat, I would venture to say I lost at least 1/3 of the weight, plus the loss during cooking. I probably ended up with around 3 pounds of smoked/cooked meat when all said and done. I have no idea what the going price per pound is John. I'm sure it varies depending on the grade and breed that it comes from. These whole shanks are actually hard to find, so I'm glad Matador can get them. Hopefully he will list this on the website at some point. Thanks for watching, I appreciate it!

    Now that was one huge piece of meat. Any dog that would get that bone would be in heaven. Excellent job Russ it looked, killer. I have not had any of Scotts q sauce yet, I'm betting I'd like it too.

      Yeah even after all that shrinkage there was still quite a bit of meat left on that bone. I was actually thinking about tossing that bone next door for their German Shepard, but thought twice and figured the owner may not like that, but I think the dog would love me for life lol. Hope you try Scotts sauce, it's really good Jaxx!

    When my Lil Doggo was with me, I would grab some Beef Shin from the Butchers and cook some up for him (it was cheaper than Dog Food and he LOVED it!)) and I would smoke and then braise or confit some for me....Gently pulled apart into it's natural muscle structure and sprinkled with some Cayenne or other pure, hot Chilli Powder and mixed with some paper thin sliced, pickled Red Onions....Simple, Unctuous, Beautiful.

    Rus, this beef shank looks absolutely delicious. Recently, I have discovered pork shanks, marketed as Hog Hammers in a local restaurant called Green Turtle Restaurant and Sports Bar in the Washington, DC area. They are meaty and tender! Yum!

      I'm sure you could do lamb shanks or leg of lamb the same way. I personally have never smoked lamb but seems to me the same method would work fine.

      Okay ,marinated the shanks in chimachar sauce smoked it with mesquite indirect for 3 to 4 hours,,it turned out pretty good,give it a shot.🇨🇦🇺🇸👍

      It's great beef Romeo! I don't know what Matt sells these far. I just looked and it's still not listed on the website, but his number is listed on the site and you could call for a price. No I haven't done anything with pigs feet, but I may just look into that. I love trying new things.

    I have haven't had beef shank before looks really good though .. Great cook nice smoke ring had a nice bark and packed with flavor. Scotts sauce is really good I have his sweet Memphis and east Carolina sauce ... Great video Russ

    I never heard of fogo charcoal.. How is it compared to other charcoals??

      It’s really good and the wood comes from Brazil. Gives a great flavor to meat and burns a long time

      I'm sure it is sold locally in some areas, but not where I live. Maybe in time it will be.

    Hey rus have you ever done a pulled pork with pulled brisket it is really good in a sandwich form

      I can't remember doing that specifically but what I have done many times is mix pulled pork with pulled chicken that were glazed with a Jack Daniels glaze. That is still one of the best BBQ sandwiches I've ever had.

    RUS , you are a amazing cook my friend that Beef Shank looked amazing brother, you smoked it to perfection, you had my mouth watering when you were pulling it apart especially in the broth and onions. You made me laugh when you went end for that third bite , if it were me taking three bites with my big mouth it would have been gone. LOL AWESOME JOB MY FRIEND. GOD BLESS YOU RUS.!!!!!

    SRF charges $9 for 4 day shipping to west coast (and meat is still frozen) , matador charges like $170 as they offer only like 2 day. No thanks

      That is BS! I order from Matador and know exactly what they charge. Tell that to someone who doesn’t know better! Besides that the shipping is based on weight. You would have to purchase a lot of meat to drive shipping up to $170
