  • Chocolate Fondant Cake/Lava Cake is one of the most easiest yet most delicious desserts you can make at home. It comes together with few ingredients and is so delicious with fresh berries and whipped vanilla cream. The cake batter can be stored in ramekins in the fridge for upto 2 days and baked right from the fridge for 15 mins. This is convenient when you have a dinner party and have guests coming over!

    Makes 3 Servings
    Recipe
    120 Grams Chocolate (1/2 cup +3 tbsp)
    70 Grams Butter (1/4cup+ 1 tbsp)
    2 Eggs
    40 Grams Sugar (2tbsp +2tsp)
    20 Grams Flour (1tbsp+1tsp)
    1/2 tsp Salt
    Coffee Ganache
    40 Grams Cream (2tbsp+2tsp)
    30 Grams Chocolate (1/4cup)
    1tsp instant coffee
    1tsp rum
    Instructions
    1. Brush the ramekins with butter and caster sugar
    2. Preheat oven to 200C/390F
    3. Boil the cream with the coffee and pour over the chopped chocolate. Add rum and put in the freezer
    4. Melt chocolate and butter on a double boiler over hot water
    5. Whip Egg and add Sugar gradually. Whip until triple in size.
    6. Pour the hot melted chocolate mixture slowly into the egg mixture and fold it gently and add flour
    7. Pour the cake batter into the ramekin halfway into the ramekin and add 1 tbsp ganache and then fill the rest of the cake batter
    8. Bake for 10-12 mins at 200C/390F depending on ramekin size and let cool for one minute in the ramekin before unmolding
    9. Serve with fresh berries and whipped cream

    Had a query regarding cocoa powder. Which brand do you prefer? Have you ever tried comparing the result of Callebaut and JB Malaysian cocoa powder?

      I used Callebaut and Cacao Barry. Haven't used the Malaysian one so I can't help you there. For me Cacao Barry is really nice :)
