    Here's how it tastes: the skin that's smoked is the most salty part and has the most taste and it's soft in touch, the inside is more spongy and you can feel the taste of milk. Overall it's great with creanberry jam.

    I'm a Pole, and it is so funny to compare what she's saying and what the translation shows. She has this typical dialect known in Polish mountains and talks so fast and colloquially. I bet every Polish person smiled in few moments :D

      @@wat-ch Different areas of the country have slightly different (or majorly) diallects from the language it's self. It's common in a lot of countries, in Spain there's gallician which is spoken up north in Galicia. Quite common

    Sheep's milk, salt, wood, smoke?! This cheese needs to be saved. I bet it's delicious. It sounds perfect for a real grilled cheese sandwich. A treasure which is being lost.

      Oscypek is very popular here in Poland (although most of it isn't made as artfully as these). So fortunately it isn't going anywhere soon. And yes, it is delicious grilled and with cranberry sauce ;)

    I spent the past summer studying in Krakow Poland, and I had this cheese. I am a chef by trade and it's like nothing I've had before. Really salty, really smoky, it was grilled when I had it. It doesn't really melt, and it was served with cranberries. I've been trying to find a way to get some here on the states. It is something quite special.

      By the way, oscypki are often (very very often) served with cranberries so you got it right ;)
      You can always try to buy some online but shipment will be hella expensive

      @@mironty I loved it, and I miss it. I visited 7 countries during the summer, but Krakow was at the top. I think it gets overlooked, but it has a lot to offer. I bought some oscypek molds and I'm going to try making it. It won't be exactly the same, but hopefully it will be close. This video gave some insight on how to do it.

      The cheese you get in Cracow (unless it's some fancy place), isn't real oscypek. It's made from cow's milk. They sell it grilled with cranberry jam in markets all over Poland and it's not even called oscypek because the name is trademarked. Still delicious, the real deal is next level though :)

    If you are offered this cheese in Poland anywhere other than the mountainous south region then I suggest you stay away, it either won't be the real deal or will be old and won't have the same flavour. I grew up with this cheese in south Poland, its an acquired taste.

      @@anttwo I would imagine that stuff is not produced in the same way, as described in the video and it's most likely vacuum packed so it lasts longer. That's why it doesn't taste so good. If you ever have a chance to visit the south of Poland try it there and see what you think.

      The only time I had (what I think to be) the real deal was here in the states. By the time I ate it, it was really hard. Almost like a salami would be, so I bet it was just old :(

      Nah I’m a tourist and I visited the Tatra Mountains twice. Oscypek is not an acquired taste because that would mean some people who have tried it for the first time wouldn’t like it. It has a waxy textured exterior and goes great with cranberry jam. What’s not to like?

      U can get a quite good one from the store it is not shit I am polish I live near Krakow and I can buy it in any shop and of course u will not get the same shape but u can eat the Loki it's the same milk the same technique but different shape

    The polish cheese is often smoked, just like the polish ham.
    The difference of this one is that it's from sheep's milk.
    The central Spanish Manchego cheese is also made from sheep's milk, but is more fermented.
    This secret polish cheese would be like the smoked and mildly cured version of the Manchego cheese.
    It's very nice that we have so many different tasty foods on our planet. We can be happy about that !

      You are absolutely correct but the salt water stage also has a big impact on the taste, and so it is saltier than Manchego

    Fun fact, every time she says "no nie?" or only "nie?" (for example in 1:13) at the end of the sentence which litterally translates to "No?" or "right?" in dialect she Actually says "You get it?"

      I'd say the meaning is closer to "Right?" which you also put at the end of a sentence. Not necessary but commonly used.

    We also have the same kind of cheese in Slovakia so if you want to have this cheese you can also come to northern regions of Slovakia such as Terchová or Liptov

    If you'll ever visit Poland there are plenty of small business owners in Zakopane, all you need to do is go to the main street and you'll be blessed with the smell of grilled cheese, i suggest going in winter, not only a perfect time for skiing in the polish mountains but also the taste of hot cheese with raspberry jam on a snowy night just ✨ *chefs kiss* ✨

      I'm sure there is a producer somewhere that can make some good cheese, I thought I saw a video on here (or a similar channel) about one that seems to be making a mark. I think it needs to be pasteurised though which probably makes them a lot milder which I wouldn't say is a bad thing. I think what we associate with American "cheese" is Velveeta. I think in the 90's people were not really keen on the taste of European style cheese but I've seen that has been changing with travel (well not right now haha) and a renewed interest in artisanal food in the oughts and the last decade.

    I went to Poland with my mom and she was excited when she found a street vendor in this region, and I got to try it. It was the best cheese I ever had and I think about it a lot. It felt like I was eating smoked sweet and salty meat.

    It's absolutely delicious when you eat it with cranberry jam so if anyone is willing to visit Poland - eating oscypek is a must
    Edit: and another fun fact - sometimes in supermarkets you can get packed oscypek but if you know how good real oscypek tastes like you will already know that these supermarket oscypki are nothing like the real handmade ones

      She just speaks really fast and in the mountainous dialect. The general Polish speech is slower and doesn't soften words that much.

      She speaks fast even for a Pole; besides, he speaks highlander dialect with a characteristic accent (but her isn't even that thick) that is clearly different from the standard Polish accent, that's why it's hard for you to understand what she's saying.

      Its a Polish dialect, in wich people speak fast, but its common in Poland to speak quickly, and given the sometimes really hard for foreign, words, it can sound like rapping xD

    Oh yes, oscypek, a must-have of a trip to the mountains :D It's awesome and luckily you can get some oscypek here in the South :D And too bad they didn't mention another mountain sheep cheese, bryndza, a white, creamy cheese, the one you put on a sandwich and it's delicious, especially the real one!

    My grandpa and bis friends do oscypek too. If i spend my holidays there its always one of the best parts. I Love all the traditions and stuff my family has☺️

    As someone who's half-Polish on my dad's side, watching this video felt like I was learning something new about the land where my blood comes from. Also, hearing that cheesemaker speak made my mind jump straight to memories of my dad speaking with colleagues over the phone.

    Its my favorite cheese, its salty with a strong taste, its so soft in the middle, and the outside is smoked, but not hard,
    It has this amazing smell and really it tastes so good with anything-
    It is so silky and Aaa! I'm craving it rn! Hopefully I'll spot it in the polish shops ;0

      A lot of people from the south of Poland speak very fast you dont notice IT that much . Also i found out that my accent kinda travels to english the fast speaking moreso than the way of saying words

    In Poland, when you go on holidays to mountains, you bring Oscypki for your family. Oscypek is worth trying. Especially heated, wita cranberry jam 😍

    Hi from Poland. I am amazed about this material. Please prepare more materials about Polish heritage, which we really keep.!!!! Unfortunately year by year less people keep Oscypek tradition. There is amazing thing to prepare material. We have ships that have special mechanizm to ride on land. It is amzing when ship swims on land!!!!

    Oscypek is great when eaten with cranberry sausce. If you go to polish mountains- Tatry you can find it everywhere. As a Pole, I highly recommend it

    The only thing I have an issue with is the title of the video "only made in Poland". The thing is that Slovaks also do Ostiepok (that's what it's called here). I think it is a cheese specific to this region, but not a specific country, which is what is offending people.

    I had this many years ago when I stayed in Zakopane. I had never seen cheese molded into such interesting shapes. I bought one of them and enjoyed it with some piwo and hard bread in an old tavern in town. It was the smokiest cheese I’d ever had - the outer part was almost brown, and quite dry and salty. I thought it was delicious and absolutely unique. I’ve never had anything else that tasted like it. And it was a cheese you ate for itself, not needing to go with anything, although the beer made it a slice of mountain heaven. Excellent fond memories!

    Making of this type of cheese is not only Polish, but also (and mainly) Slovak tradition. Oštiepok (as it is called in slovak) has been and is made in Slovakia for centuries and it is certainly nit forgotten, as it is still one of the most popular types of cheese in Slovakia...
