  • 🍲✨ Brodo di Tacchino | Turkey Broth! ✨🍲
    Nick shares his family favourite Italian turkey and beef broth, perfect for cold winter nights. In Italy, everyone has their own version of Brodo, and Nick loves using turkey instead of chicken for a rich and flavourful broth.
    It's a winner in his family, highly requested by his children, and amazing when you're feeling unwell. Fondly referred to as Italian penicillin, this comforting meal is also budget-friendly and goes a long way.
    You can add small beef meatballs for extra protein, but tonight, Nick is enjoying it without.
    Brodo di Tacchino | Italian Turkey Broth (Serves 6)
    Ingredients:
    3 turkey wings or 1 turkey leg (or substitute with 4 pieces of chicken Maryland)
    3 litres of water
    1 piece of osso bucco (shin beef)
    2 whole peeled tomatoes
    2 celery stalks and leaves, chopped (we use the leaves as they hold so much flavour)
    1 carrot, chopped
    1/2 large onion, chopped
    Salt/pepper to season the broth to your liking
    Drizzle of extra virgin olive oil
    1 packet of pastina (little pasta) - Nick used 'Corallini'
    Directions:
    1️⃣ In a large pot, combine the water with all the ingredients.
    2️⃣ Bring to a boil, then reduce the heat and simmer for 1.5 hours.
    3️⃣ Remove the turkey and meat, shred, and return to the broth.
    4️⃣ In a separate pot of salted water, boil your pastina (little pasta) according to the packet directions. Drain.
    5️⃣ In a bowl, serve a ladle of pastina with the brodo (broth). Serve with grated pecorino or parmesan cheese (chilli is always optional).
