Today I am in favor of building a design similar to that of commercial pedalboards, with torsion or spiral springs and direct coupling of the potentiometers. A pedal with its lever, its axis and its spring would be a more rigid and precise system. I think it's doable. I'm also thinking of making the brake and clutch pedals hinged from above, so they work like they do in real vehicles. Of course that complicates the design, but it's just a matter of making the same structure from above. It is obvious that the brake and accelerator pedal levers would be quite long, and that makes it necessary to use harder springs, but they would work on the same principle. Theoretically it would be very precise and easy to maintain and should be strongly fixed to the piece of furniture that serves as a support for the joystick. Something refined would be to use metal axles and bearings so that the articulation is perfect and silent, imagine what that would be like. In the version with hanging pedals it would be mandatory, due to the length of the levers.
If you can't find a better spring for your DIY then get it from the nearest shop which you find in every motorbike's foot brakes. It's good for this Pedal project.

for now only use one type of spring, to get the brake and clutch mod, you can modify it yourself.
